Sigh...I was so excited when this grill showed up right before Memorial Day weekend. The box was in great condition ruclips.net/user/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt and had all of the pieces enclosed. The directions need a bit of rewriting in my opinion. I did put this together by myself and it took me about 4 hours and 3 breaks. I'm sure if you had a helping hand, it would go much faster. My suggestion would be to unbox everything and lay out each piece, have a screwdriver and small socket wrench available as well. I will say that once you get going, the directions are easy to follow. I did have to consult the pictures/glossary in the back for a few pieces. Fast forward. The grill works perfectly as described and did not produce a propane-like taste to the food. I hear that you can have these issues with a gas grill. Overall, I am very happy with the grill despite the process.
I am in love with you guys...... can't stop watching and making dishes according to Sam's recipe. Made the Mexican pizzas a couple days ago......I made them smaller and did 14 pizzas. None were left after dinner.....Sam you the MAN!

I returned home to Costa Rica the other day from the US with about 70 pounds of cooking supplies and made one of your chicken recipes for lunch yesterday for a group of 10. Thanks guys, you are making my life better every day. And...I have a freezer full of mahi so I'd love to see some ideas on what to do with it.

Yep, spatchcocking is definitely the way to go. I also usually make a compound butter with some of the spices and stuff it under the skin before roasting/grilling.
And wrap 1 or 2 good heavy bricks in foil and leave them on the chicken while on the heat! You won't believe the crust on the skin and how juicy that makes it!
I follow lot of cooking channels but Sam is one of them whose recipes I really end up making, BBQ pit boys is another one. Somehow it feels I can mess things up a little and still come out good.

The only thing I did different, was marinade the bird in a one gallon Ziploc freezer bag. It was hard to leave some aside for near future (happening tomorrow) chicken quesadillas. I love lemon chicken! I wouldn't change anything...with one exception. I would not use the marinade as a dipping sauce unless it was boiled after dipping the brush onto the raw chicken.

Great video, already bought the groceries, so I'm gonna try it tonight. How long did you end up giving the chicken on the grill? If you got a 3 burner grill, would you recommend using the middle, or one of the sides, for indirect heat?
Great video as usual! Your videos always make me hungry lol. I usually make a lemon brine when making lemon chicken. I'll brine it the day before then the day after I'll take it out and cut the spine out and set it in the fridge so it helps dry it out. A few hours before dinner I'll do the marinade. I never played around with lemon grass, and I'm definitely going to try that marinade next time I do a lemon chicken. It looks good! 🤤
I make some pretty good chicken myself- I take thighs, marinate them in a mixture of olive oil, Alegro marinade, rotisserie chicken seasoning, ranch dressing powder, garlic, onion, some Tony Chachere's cajun seasoning, a little pollo asade seasoning, and let them all mix together in a ziplock and marinate for about an hour. Then I grill them at a medium temperature, checking every five minutes and turning, making sure the chicken gets up to temperature. Its pretty simple.
Did not have a whole chicken nor good weather for grilling so I put the marinade in the bag with chicken breasts and straight into sous-vide. Turned out amazing and then had a sort of au-jus to spread over them on the plate. Great recipe, thank you.
Those microplane zesters are also great for FINELY grating cheese, particularly when you're making a bechamel sauce. The finely grated cheese melts so perfectly and you have to do way less stirring.
Pretty much everything I make comes from Sam…whether it’s someone else’s recipe/idea I’ll use what I’ve learned here to make it better, super grateful, I’m definitely the food guy in the family now lol
