    1/2 teaspoon ground cloves
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground allspice
    1/4 teaspoon cayenne pepper (optional, for extra spice)
    Instructions:
    Prepare the Tomatoes:
    Wash the tomatoes thoroughly.
    Remove the stems and chop them roughly.
    Cooking the Base:
    In a large saucepan, combine the chopped tomatoes, onion, and garlic.
    Cook over medium heat, stirring occasionally, until the tomatoes break down and become soft, about 20-30 minutes.
    Straining:
    Once the tomatoes are soft, pass the mixture through a fine-mesh sieve or a food mill to remove the seeds and skins. This will give you a smooth tomato base.
    Cooking the Ketchup:
    Return the strained tomato mixture to the saucepan.
    Add vinegar, brown sugar, salt, black pepper, mustard powder, cloves, cinnamon, allspice, and cayenne pepper (if using).
    Stir well to combine.
    Simmer the mixture over low heat, stirring occasionally, until it thickens to the desired consistency, about 1-2 hours.
    Adjusting the Seasoning:

    Cooling and Storing:
