Brain freeze is a nerve response when something cold hits the roof of your mouth causing rapid swelling of blood vessels and pain to your head ;) Personally I think it's an overload of insanely awesome flavour hitting your taste buds that your head can't handle it and wants to explode! ;p

The soft palette at the back of your mouth is very temperature-sensitive, and actually affects the temperature of your cranium - the most recent explanation for why we yawn is to cool down our brains by getting cold air onto the soft palette! So brain freeze happens when the soft palette gets too cold too quickly.

In Italy they call it the notte Bianca. Here in Malta we have one as well each year. Basically, it's an all night event organised in a particular city. The city is filled with music, opened museums and activities. It's well fun :)
