1 - Not sure if you did, looks close, did you take a slightly wider stance for the higher trajectory shot? 2 - Maybe it's just common sense based on how steep the slope is, but at what point would you club down to avoid delofting the club too much?

Most situations matching body to slope when hitting irons unless you need lower trajectory. When chipping and pitching most situations leaning into it
Do the same concepts apply to a downhill lie from the fairway for a longer approach shot with an iron?
Yes same concepts apply however just be aware the longer the club the lower the launch angle so that consideration needs to be factored in

Yes I did take a wider stance for the higher shot. I use lob wedge 99% of time so I alter loft as needed in the swing vs changing the club used
