Music theory is easier to teach visually on a keyboard because everything is laid out in order from low to high note and there are no two repeating notes. Music theory is more difficult to grasp on guitar because you can play the same note on two different strings, the layout isn’t intuitive to a beginner, and yes, it hurts your fingers at first. On guitar, once you learn where certain notes are located on which strings, you can memorize the patterns of each scale/mode and easily transpose it to another note (I.e., your root starting position changes, but the pattern remains almost virtually the same). This makes it easier to play songs in different keys once you’ve mastered one, unlike piano which requires that you memorize all of the notes in each scale/mode.
