I’m from Texas and take BBQ seriously in some parts. Best brisket looks almost red or pink and melts in your mouth! When it’s that color u know it’s not cooked with heat but with smoke!!!!!! Boy oh boy now u got me wanting brisket!

To those talking about price, keep in mind they are talking Aussie dollars, not usd, so there is a 25% difference and aussies have their prices include their sales taxes (I think 10%)where American prices don't include the sales tax, though it might since this is a food truck.

Definitely check out Port Antonio (Wilks Bay Resort) - its a plug because my uncle owns it but its like paradise.
So in case someone else didn't answer....in Jamaica jerk is both a seasoning (both wet and dry types) and u then grill the meats over wood. If you go to a Jamaican restaurant get braised oxtails and/or jerk. Also fried fish with pickled veg (escabesche)
That donut van- my family used to challenge each other who would finish their donut without licking their lips from all the sugar and the jam in the middle was so warm making it harder. ❤️
I am a Texan living in Adelaide. Two types of Brisket when served is Moist or Lean. Lean is less fat and Moist is fatty and juicy. It depends on your taste and what you like. I need to try the BiggerthanTexas food truck when I visit Melbourne next

Ah this food truck festival at Vic Market has ended a few weeks ago, you guys should check out the one in South Wharf, called Melbourne Street Eatz. It’s got a nicer vibe with live DJ and plenty of seating area 😃 We reviewed it in our channel too 😉
Should try "Yo! India", great family run food truck and they recently setup a restaurant on St.Kilda road. Though COVID has hit them really hard as all hospo places. Great vid guys!
When you can travel again you should go to Jamaica. I think you could do a great series of videos. So many local vendors and street food and they have the best KFC
Dalena has "Brioche" buns..so sweet and soft. Chonny has Sesame seeds on his buns ..but he has 2 all beef patties special sauce, lettuce cheese... so that helps

If you think that brisket was good you guys would love Texas! I did Fort Worth/ Dallas, Houston, Austin and San Antonio in six days, twice. The food was absolutely phenomenal! Some of the highlights were Risky’s barbecue, Lulu‘s chicken fried steak, Kenny and Ziggy’s New York deli, Franklin’s barbecue, Henry’s Puffy Tacos and burritos at the Naked Iguana🍖🥩🥞🥪🌮🌯 😋

Whenever the food truck event happening in my country, the food always mediocre but the price is insanely expensive. And its mostly filled with either trendy ig hipster food or just cheese-ville all the way.
The bar b Q place shouldn't precut their meat. The reason it had gotten tough was most likely due to the moisture coming out sitting cut up under cover. Fresh cut would have been much better! Butter Chicken looked great! Jerk chicken is almost always a winner. Great video!

For Jamaican food you have to do oxtail , Beef patty with coco bread. There's more but those are a good start.
Your brisket sandwich looked like it was actually tri-tip which would track with the texture you described and the close-up shots you took.
