I just made this today. It's great that the lemongrass taste is pretty gentle and not too overpowering. And no fish sauce to choke out all the flavour. Thanks!
To cook in a crockpot you follow the steps through the meat browning than transfer to the crockpot. Make sure to deglaze your browning pot. Then continue with the recipe. Just don't fill the crockpot all the way. The meat will release a decent amout of moisture.

I like that you often say "if you don't have this ingredient, it's okay." Today, I made my Viet husband take me to the lil market near our house, and I bought all of the ingredients for Bo Kho. We bought some beautiful baguettes, and oh my gosh it was so good. I've also made your cha giò with rice paper, and they were soooo good. I've asked my father-in-law (who's on vacation in Vietnam) to bring me back some cha giò re nets that you showed in your video, as I think they may not be available in my town. My husband says they're really really yummy. Please keep up with your lovely videos. After watching several recipes, I finally had confidence in trying out yours. My family and my guests really praised your recipe sky high. They said the local beef noodle shop will close if I cooked the way you taught me and I opened a shop selling your version of beef noodles/stew. I liked everything about it but next time, I would not put any sugar, but as a side dish, serve salted preserved veg sliced very thinly with fried shallots. I used bone broth instead of cocnut water (too lazy to drive few miles to buy it) I'll use coconut water the next time. Yes, I was brave enough to invite guests to eat with us because as I looked at you cook, I knew it would turn out well. Thank you, and hope to try out more of your recipes. I rate this recipe 5 Star. Would you like to open a shop here in Malaysia and give the so called beef noodle shop a run for their mone??? LOL

We have something very similar in Taiwan. Its called spicy beef soup :) I'm probably going to butcher the the romanization of the actual name so basically we add lots of tomatoes, beef tendon and brisket, some chili paste, and similar seasonings as stated in this video and simmer it for a long time til the meats falls apart. Then serve with noodles on a cold day!
"...beef goes better with soy sauce..." you remind me very much of my mom, who uses soy sauce instead of fish sauce for every beef dish. When I rent my own place next year I'll definitely give these recipes a shot. Keep up the good work!

I love Vietnamese food.!!! There is always a great combination of sauces, spices and fresh veggies. This is a great dish when the beef is very tender after I put it in a crock pot. I also add coconut milk for a more richer, tastier and thicker broth but you can't go wrong with this recipe. Thanks for uploading

I have been using this recipe every time I cooked bò kho. It was approved by my husband and guests all the time. I’ve used butter instead of cooking oil and add a shot of red wine to enhance the flavor (this dish originated from French cuisine)
Hu Tieu Bo Kho from Helen's Recipe, Thank you Helen! It looks and taste delicious! Just one thing: if we like coconut milk, it is OK to do so, but it will neutralize the aroma of the herbs, what it suppose not to be. I like it both, next time without coco milk.

I've made this a couple times. It's so good!! Made it in the crock pot once and then had it for breakfast with cornbread. Best breakfast ever!

You mean coconut juice. Coconut milk will make it creamy and the broth cloudy hehe.

for BO kho, SOY SAUCE is better than FISH SAUCE.
