- This delicious cake is a traditional recipe from the Basque Country. Due to its simultaneously crunchy and creamy texture, it has been chosen to be part of the menu of my family parties for over 20 years!
It is a dessert chosen not only at family gatherings of the Basque inhabitants, but also present in the best restaurants that make up the “Eguzkia”, an association created to protect and promote the true Basque Cake.
With this cake, I travel to places from my past and intensely savor a “slice” of this rich gastronomic heritage.

PASTA:
300 g of flour
1 pinch of salt
120 g of butter
200 g of sugar
2 eggs
1 tablespoon of rum
CREAM:
3 eggs
½ liter of milk
120 g of sugar
40 g of flour
1 tablespoon of rum
ROOF:
1 egg yolk (to brush)
