I don’t remember how I know but I was told not to stir adobo when you put vinegar to let chicken take in the flavor of vinegar & that it if you stir right away it will taste bitter. You have to wait till it boils then you can stir adobo to incorporate the vinegar throughout rest of the sauce. Always love your version of adobo, have watched your adobo recipe several times…lol

sa akin, mas ma-saucy or masabaw mas okay!!! yung version ko sa pagmarinate -all the same but i add in sweet paprika (a teaspoon), while during sa pagprito (in medium heat) nilalagyan ko ng thumbsize ginger (diced so small) and diced garlic. about the vinegar thing-i, I heard before pumapait yung dish if you stir it right away kaya hayaan muna kumulo! [though pwede rin iexperiment kung tutuo nga!!lol]
