- In a previous video, I used a stainless steel water bottle as a pressure chamber to add argon and carbon dioxide to beer. This time, I used pure CO2 to carbonate some apple slices. They're very tasty!

It would be very interesting to see the carbo-apple slices in a glass of apple juice or flavored water. A cocktail with a carbo fruit floating inside would likely be a big hit. Imagine a cherry, apple, pineapple, blueberries floating/fizzing martini, vodka gimlet, etc. Interesting and yummy. Iced tea as well.
I did this, works very well. I use beer kegs and I can carbonate a lot of apples in a few days in my fridge. You don't even have to cut them, you use them whole and they get very carbonated. The look on people's faces is awesome when they bite in the apples.
Really cool! You should try orange slices or something citrus based and see what kind of flavors you can get out of that!
This is very interesting ! I tried the apples myself as I have beer kegs for home brewing. It works very well and the result is astonishing. We even tried different fruits such as raspberries, oranges, pears, kiwifruits. Works best on apples and pears because of the texture but the raspberries were completely crushed. The kiwifruit and oranges were looking not too bad, and they taste soso. I found that the fruits get carbonated even if you keep them whole. Good as chocolate fondue ;)

DigGil3 makes an interesting point - could this be used to store fresh fruit for extended periods of time? You should trying doing it with something like strawberries, which are prone to going bad in just a few days time even in the fridge. It would be awesome if you could extend their lifetime to a week or two! Do more followups on this please. :)
Is there a considerable difference between this result & the result of the 2 hours attempt?

I was watching this video and thought I may have an idea that could speed up the process of carbonating the fruit and prevent the slight yellowing.
If you put a valve in your pressure chamber, might you try creating a full vacuum in the chamber first to remove any oxygen.
Then detach the vacuum and attach your co2 tank and pump your co2 into your pressure chamber.
Just a thought, I don't know if it would make any difference.

I have an idea! Gasses are more soluble to liquids in colder temperatures. So, why not place the pressure vessel in a refrigerator and see how much more carbonated the apple slices can get?
How much do those cost?
I had nitrogen-infused cherries once. If you have access to compressed nitrogen, I'd love to hear a comparison :)

I've heard that you should not breathe industrial grade helium because it might contain other things that could hurt you. Could the same be true of eating industrial grade C02? Are you using some sort of very pure C02? Or, maybe the person who told me that just didn't want me wasting his helium... Great video, thanks!

I assume you refrigerated the apple slices while they were getting saturated with CO2?
Just thinking of the bad, anerobic bacteria that would probably grow very happily in that environment (like botulin)
Most bacteria don’t grow in low pH environments. However, C. botulinum can grow under low pH, but only with protein-rich substrates.

Pass your paint ball CO2 through a good filter and it will capture oil droplets.
However, I don't know if there are other gases in it.

next time you do this coat the apples with some acidic juice. such as lemon or lime

Hi - next time, just dip the apples in some water with a lemon to keep the oxidation from the apples.
