  • Welcome to Elif's Kitchen! Today, I'm excited to share with you a video recipe that will add a special touch to your dinner parties with its easy preparation: Chicken Sultan Kebab. This delightful recipe is a feast for both the eyes and the palate.
    Ingredients
    For aubergine:
    1 aubergine (peeled and diced)
    2 tablespoons of oil (for frying)
    salt (for soaking the aubergines)
    For the chicken stuffing:
    800 grams chicken breast and boneless chicken cutlets (cut into small cubes)
    3 tablespoons of oil (27 grams) (0.0595lb)
    1 onion (chopped into pieces)
    1 tbsp tomato paste (40gram) (0.0882lb)
    1 cup canned or frozen peas
    1 teaspoon salt (9Gram) (0,0198lb)
    1 teaspoon chilli flakes (1Gram) (0.0022lb)
    1 teaspoon thyme (1Gram) (0.0022lb)
    half teaspoon black pepper (1gram) (0.0022lb)
    For the bechamel sauce:
    2 tablespoons butter (60grams) (0.1323lb)
    1.5 tbsp flour (26grams) (0.0573lb)
    2.5 cups milk (525 grams) (1.1574lb)
    1 teaspoon salt (3Gram) (0.0066lb)
    For the topping
    about 100 grams of grated cheddar cheese
    red chilli powder
    Other
    2 fresh daily phyllo pastry
    Instructions:
    Eggplant Preparation: Peel and dice the eggplants, then soak them in salted water for 10 minutes. Afterward, thoroughly mix with vegetable oil and optionally fry in an air fryer or deep-fry in hot oil.
    Chicken Mixture Preparation: Heat vegetable oil in a pan, add the chicken, and cook on high heat until it changes color. Then add the onion, tomato paste, peas, and seasonings, and simmer on low heat until the liquid is absorbed.
    Béchamel Sauce: Melt the butter, stir in the flour and cook for a few minutes. Gradually add the milk, stirring continuously, until the sauce is smooth and slightly thickened. Season with salt.
    Phyllo Pastry Preparation: Divide each phyllo pastry into four equal parts, place a piece over a bowl, fill it with the chicken mixture, then close the edges and invert it onto a greased baking dish.
    Baking: Pour the béchamel sauce over the prepared kebabs and bake in a preheated oven at 190°C (374°F) for about 20-25 minutes. Sprinkle grated cheese and a bit of red chili powder on top and return to the oven until the cheese melts and turns golden.
