When you convert ,do like this .then only it will be accurate. 1.5 cup maida to grams. If its sugar you have to convert 1.5 cup sugar to grams. If we type just 1.5 cup to gms ,it will be different with the weight of different ingredients. Hope u understand
Eggless Light Christmas Cake Ingredients For the cake • 1 + ½ cup maida • ¼ teaspoon cinnamon • ⅛ teaspoon ginger powder • ⅛ teaspoon clove • ⅛ teaspoon nutmeg powder • 1 teaspoon baking powder • ½ teaspoon baking soda • ½ cup melted butter • ¾ cup brown sugar / white sugar • 1 cup curd • 1 tbsp orange marmalade/ pineapple jam • 1 teaspoon vanilla extract • 1/2 tsp salt For soaking • 1 cup rum • 1/4 cup brandy (Both 240 - 360 ml ) • 1/2 cup each kismis & raisins • 1/4 cup currants • 1/2 cup prunes • 1/8 cup tuttifrutti • ¼ cup dried apricots • 1/4 cup dried cranberries • 1/8 cup dried/ stewed pineapple • 1/4 cup candied cherries • 1/4 cup fig • ⅛ cup candied lemon or orange or both For folding • ¼ cup almond chopped • ¼ cup cashews chopped To feed the cake: • Rum / brandy (1-2 tbsp per week) Instructions • In a bowl mix both alcohol. • Add all dry fruits and candied mix in ghe alcohol and keep overnight or minimum 4 hours for soaking. • Pre-heat the oven to 160 degree C and line an 8 inch or 7 inch ( for tall cake) round cake pan with parchment paper. • In a bowl whisk together flour, baking powder, baking soda, salt , the spices and set aside. • Whisk together brown sugar and melted butter in a separate bowl until pale and well combined. • Now add the yogurt to the melted butter and sugar mixture and mix well. • Add the marmalade / jam and vanilla extract. • Gently fold in the dry ingredients and mix until everything is well combined and there are no large flour pockets in the batter. Do not over mix at this stage. • Keep a small portion of the soaked dry fruits aside and fold in the rest along with the chopped, almonds and cashews in the batter and transfer the batter to the prepared cake pan. Always better to coat 2 - 3 tablespoon flour with the fruits and nuts. This will prevent yhe fruits from sinking down. • Bake at 160C for 1 hour or only until a skewer inserted in the center comes out clean. • Take out of the oven, and whilst it's still hot, use a skewer to make about 10-12 holes all over the cake. • Pour the 4tbsp rum / brandy all over the top of the cake. Notes How to store a Christmas cake? Wrap the cake tightly in a double layer of baking parchment (greaseproof paper) and a double layer of foil, then place in an airtight container, in a cupboard (away from sunlight) at room temperature. Unwrap and feed with a tablespoon of alcohol once a week, then wrap again and store in the same way. How long will it keep? If stored properly (see above), an un-iced fruit Christmas cake should keep well for 4-5 months at room temperature. You can also freeze the un-iced wrapped cake for up to a year. Defrost the cake, and ensure it comes to room temperature before decorating and/or eating.

Minimum 1 month soaking will give amazing results, but you can also use fruits which is soaked for even 3 days.

Non alcoholic plum will stay only for 2-3 days in room temperature but u can keep in refrigerator for a week.
