I have been cooking my eggs this way since I was 15. I am now almost 70. Recently I tried an alternate method . Bring the water to a boil first and then gently add the eggs. Turn off heat and cover and let stand for 5 to 15 minutes. Try it. I think you will find it to be a superior method. Happy trails!!

Then you can turn off the heat .it depends on the size of the pan and the number of eggs. Usually only about thirty seconds or less.. then just cover and let sit for 15 minutes . 🤣🇺🇸😃

I learned watching Julia Cild on PBS many years ago. For hard boiled eggs, bring the water to a boil, add the eggs, boil for 13 min for the first 3 eggs, add a minute for each additional egg after that. She even gave instructions on how to pick eggs that won't crack when you put them in the boiling water, but I didn't retain that info. Also, note, she's on record giving other instructions on boiled eggs, but this has worked for me for 30 years and I have perfect hard boiled eggs every time.
Having the eggs in the water when you begin to boil it can make the shell come off easier, and reduces the appearance of the green ring around the yolk. But neither of those things are very important to the taste of the egg. The ice bath is another thing to make the egg easier to peel. In the end, even a 'hard to peel egg' isn't that hard to peel so... do it however works.

If you put eggs straight into cold water from the boiling water, then they peel really easily.
I made some earlier and they peeled like magic from ice water
I always put them in an ice bath and they never peel like that.
