Hi Guy, You can do all the mellows and pineapple the day before. You CANNOT do raspberries, strawberries, or blackberries. The berries will get very soft within about 2 hours of washing. The raspberries and strawberries will also bleed into the other fruit as well. So do all the berries last minute. Also, wrap the platter very well. I normally do something called a caterers rap. Pull the saran wrap out, far enough, that you can place the platter on top of the saran and wrap the entire platter. I do that in both directions so that the entire platters is wrapperd
