Hi Jack love your sharing on bread baking techniques ! I have many questions... particular to pre-fermentation , poolish/biga which was prepared 4-16 hrs in advance will rise and fall. Are we to use it when it is at its peak or it doesn't matter at all. How does it affect the bread crumb? Tks.
