As a logistics junkie, I'm loving the kitchen truck behind the scenes content. I'm curious. Does Owen have an assistant or sou chef or even a dish washer to assist him, or is it a one man show?

Chef Owen said that the stage determines what he prepares, whether it's a TT, flat spring, mountain stage, etc. Does that mean the following stage (what the athletes will be doing the next day, after dinner), or the stage that just happened (what they did that day, prior to eating dinner)? Also, so curious what the athletes eat for breakfast and when!

Just going to jump in, during the tour, it's unlikely. Quinoa is a filling, slow-digesting carb. These guys need to eat a lot of carbs, you cant stomach that quantity with quinoa. Also, it's not really a "comfort" food. The house (truck?) made bread must be such a comfort to the riders. love it.
We asked this for an upcoming video, but it's likely to get cut due to length, so we'll reply here. He does serve it sometimes, but it's not a favorite of this lineup of riders, and the high fiber content makes it harder to fit into their nutrition plan. So, he may include it for a rest day, but not for a normal race day.
Avoid foods that cause gastrointestinal distress during riding. I read Rafas book about tennis and the night before a tournament he ate only plain pasta with nothing. I imagine pro cyclists do suffer from that.
