Idk if people realize how important these fish are. They eat the algae off of the coral, this is important because coral needs sunlight for the zoozanthalae to get energy, this gives coral its color and has a symbiotic relationship with the coral that the coral cannot live without. Without the parrot fish the algae would grow over the coral causing the zoozanthalae to leave the existing coral giving the coral a white color know as coral bleaching which, if left without the zoozanthalae, the coral will die. The process of fishing these fish can also be harmful since many fisherman use harmful fishing techniques such as blast fishing (throwing dynamite in the water and shocking the fish) and cyanide fishing. A combination of the algae and the harmful fishing methods of the parrot fish only serve to accelerate the deterioration of coral reefs.
This fish is called an “Uhu” in Hawaii. Typically caught through spear fishing but possible to catch it with a rod. We’ll usually bake the Uhu stuffed with lup cheong sausage, mayo, and pretty much whatever else you wanna use.
I’m a Florida native and love these guys. You’re it allowed to fish for these to eat but can be kept for pets if under 12”. I have eaten them before the laws changed and the ones under 12” taste almost like a mixture of crab and lobster.. they have a dense firm texture but also quite delicate in form and flavor.
Hey I came across your channel a few days ago I subscribed of course I've been in the restaurant business for 16 years and love cooking. As someone who shares a interest in cooking (seafood is my favorite especially because I only eat what I can harvest/catch) a little tip with big scaled fish try scaling it next time way easier and won't be so harsh on your knife. in my experience for parrot fish, because of the scales, we usually either scale (de-scale) the fish first or skin the fish first (cut under the skin to remove it, in order to cut the sushi/sashimi pieces. this reduces damage to your knives and risk of cutting yourself because of the scales.

Eat it with ponzu and mitsuba

i go scuba diving in the middle east every summer and you see parrotfish everywhere. they differ in size so much you will sometimes look at one and wonder if its even part if the same species because its so big. its also pretty cool that the freemales dont have that incredible rainbow. they are just kinda grey and black
