Almost exactly 3 years since this iconic Chef passed away. I'm always happy to come across him when I'm searching for a recipe. I was born a year before Jack and while I'm not as heavy as he was, I'm probably pretty close to joining him in Heaven's kitchen.
RIP Daddy Jack. You did San Francisco proud with your take on a traditional SF shrimp Louie. Only thing is, you forgot to put a shot of lemon juice in the Louie sauce. Love that you put a few shots of brandy in the Louie sauce. Only true chefs know that secret 👍
Nice version of Shrimp Louie. We make a sauce with Heinz Chili Sauce, Heinz Ketchup, Lea & Perrions Worcestershire, Atomic Horseradish and lemon juice. I guess it's more like a cocktail sauce but surely has a punch to it that carries flavor with the heat. You can add a bit of your favorite hot sauce to it too for added flavor, we use Cholula. Hard to beat big fat colossal prawn dipped in a nice sauce !
