The potatoes and broccoli make for a marvelous meal, with that delightfully perky za’atar pesto topper! Noor, I know what you mean, getting a Middle Eastern za’atar, with hyssop rather than thyme. I also can’t resist a sprinkling of sumac all over the plate.

Sweet potatoes have a much lower glycemic index you could use those instead (or maybe one white potato and 3 sweet so you still have the combo).
Please, those cooks are hardly suffering. I wish my skin looked that healthy.
