- Bitter gourd/ bitter melon are slit, stuffed with spicy, tangy mixture and deep fried. Bitter melon if cooked correctly can be very delicious. This side dish goes well with chapati, roti or rice.

Ingredients
1 tbsp amchoor pdr
1 tbsp besan (bengal gram flour)
8 number Bitter gourd
1 pinch Chilli powder
1 springs coriander leaves
1 tsp cumin seeds
1 pinch fennel (optional)
1 tbsp ginger garlic paste
2 tbsp mustard oil
2 tbsp oil
1 number Onions
1 to taste Salt
1 to taste sugar or jaggery
1 pinch Turmeric
Directions
• .slit gourds from one side.Remove seeds and chop the seeds.(use small 3inch size karela scrape the rough edges
• add oil in a pan , add cumin and add onions fry till golden brown,add turmeric and besan flour cook , till nice flavor of roasted besan
• add ginger garlic paste and add chilli pdr and add chopped bitter melon seeds
• cook till nicely roasted add amchoor pdr , saute in slow flame , add coriander leaves and little sugar or jaggery
• stuff the bitter melon with the cooked mixture
• tie the karela so the mixture is intact inside while cooking
• add mustard oil ,shallow fry in medium heat changing the sides till well cooked and crispy

I am of Indian heritage but was born in the Caribbean.I remember my mother making the same thing but she steamed it instead of frying it.I still eat it but I just fry the karela with all the necessary ingrediants,I then eat it with dhal and rice.After living in Trinidad for so long,(my forefathers left India in the mid 18th century),we still retained some Indian culture.I will now do the karela the same as you did.

oh i love that..veg.i cut them in round small . pieces an d i cook half way with little salt and fry in little bit of ghee or in oil .
Hi Sanjay, I cook this dish very regularly, Karela being one of my favourite vegetable. I see that you are making it the north Indian style (right?) but we always add a lot of saunf. Without saunf I think it will not have that special aroma and flavour. Please try it. :)

@derubala I agree with you. just microwake for 2-3 mins and use very little oil in pan and just keep those karela. Ytou can use just 1 tbs of oil that's more than enough.
Hey sanjay, i tried this reciepe and it turnednout to be awesome..my mom told me to add fennel seeds in the mixture and tht gave a very distinct flavor to it...

when I was a little girl I did not like it, Now I love it. In Tamilnadu we make "pitla", cooked with dhal and tamarind sauce. In masala TV, after making the stuffed melon the way chef makes it here, they cook it further in a yogurt plus spice gravey. I make thein slices, salt, sun dry and, then sau'te it with red chili powder. It is frying but with very little oil. It tastes good

had trouble to get my kids to eat i love karela...can also be cooked in coconut milk...and stuffed with...potato..,carrot,..sweet peas from tin and any other fav. seasonings..

vidalia onion, all the scrapping and inside of stuff of karela, chop and blend in food processor. with vidalia onion you need no sugar. add til, coconut, amchur, salt, paper.
May be few minutes in microwave before fry will help too cook fast!

i want to make this and suprise the family...apparantly its difficult making this
immerse thinly sliced karelas in a lemon sized tamaring & some salt soaked in a lil water for aroung 5-10 mins.The bitterness goes away n then it can be either shallow fried as crispies (thus using lil oil) or u could cook it with lil bit chilies,garnished with freshly grated coconut,mustard seeds & curry leaves :)

I like it raw. Take out the seeds, slice up into pieces, put into a bowl with sea salt, pepper sauce, vinegar.. keep it in the fridge for snack time.
I don't eat onion and garlic. What can I use to replace the bulk of onions in this recipe? Maybe grated green mango, like funjabbi suggested, and skip the amchur? Anything else?

@nizar559 Oh. Didn't think of that. My natural instinct was to cook it with something sweet, such as carrot. sour you say? That might be a good idea! And I soak them in salt water of course. It helps a little.

I found a way to eat the bitter melon. open the karela =bitter melon remove seeds, then make a juice with 1 whole lime, 1/2 lemon, 1/2 cucumber, 1 celery, 1 or 2 garlic solves 1/2 ppple Salt and Pepper , pinch cayenne, and anything else you want ... blend everything.
i like karela but its hate the seeds they taste the most bitter so can i use something else??
Soak them in salt water for a while, then drain. For some reason, the salt water reduces the bitterness. At least that's what we do at home.
