- Resha Ghosht (Lachha Ghosht) Recipe
A flavorful, slow-cooked shredded meat dish that can be served as is or transformed into rolls and sandwiches.
Ingredients
For Cooking the Meat
• 1 kg beef or mutton
• 1 tbsp ginger paste
• 1 tbsp garlic paste
• 2 tsp hot red chili powder
• 3 tsp salt (adjust to taste)
• 3 tbsp white vinegar
• 1 cup water
For Frying the Meat
• 2-3 tbsp ghee or butter
• 4-5 cloves garlic, chopped
• 2-4 green chilies, chopped
• 1 tsp black pepper powder
• 1 tsp garam masala powder
• 1 tsp cumin seeds
• 2-4 tbsp plain yogurt
For Garnish
• Julienne-cut ginger
• Chopped cilantro
Instructions
Step 1: Cooking the Meat
1. In a pan, add meat, ginger-garlic paste, red chili powder, salt, and white vinegar.
2. Place the pan on high heat and mix well.
3. Add 1 cup of water and let it come to a boil.
4. Cover with a lid and cook on low heat for about 1.5 hours until the meat is tender.
5. Shred the cooked meat.
6. Open the lid and cook until all excess water evaporates.
Step 2: Frying the Meat
1. Heat a frying pan on medium heat.
2. Add ghee or butter.
3. Add chopped garlic, green chilies, black pepper, garam masala, and cumin seeds. Sauté well.
4. Add yogurt and stir.
5. Add shredded meat and mix everything well.
6. Garnish with ginger and cilantro.
Serving Suggestions
• Serve with raita, naan, onions, and roti.
• Make Kabob Rolls with paratha, Resha Ghosht, sliced onions, imli ki chutney, and a sauce of your choice.
• Make Sandwiches using the creamy sauce below.
Resha Ghosht Sandwich Recipe
For Creamy Sauce
• 1 tsp oil
• 2 tbsp butter
• 2 tbsp white flour
• ½ tsp black pepper
• ½ tsp salt
• ½ tsp MSG (optional)
• ½ tsp red chili flakes
• ½ tsp cumin seeds
• 2 tbsp sliced white onion
• 2 tbsp chopped bell pepper
• 3 tbsp mushrooms, sliced
• ½ cup milk (adjust as needed)
• 1 cup water
• 2 tbsp chopped green onion
• 2 tbsp grated mozzarella cheese
Instructions
1. Heat oil and butter in a pan.
2. Add white flour and stir continuously until slightly golden.
3. Add black pepper, salt, MSG, red chili flakes, and cumin seeds. Mix well.
4. Add onions, bell peppers, and mushrooms. Sauté for a minute.
5. Pour in milk and water while stirring continuously to form a smooth sauce.
6. Let it sit for 2 minutes, then mix in green onions and mozzarella cheese.
Assembling the Sandwich
1. Heat a pan with a few drops of oil and reheat leftover Resha Ghosht. Add a little water if needed.
2. Spread the creamy sauce on slices of bread.
3. Add some heated Resha Ghosht on top.
4. Close the sandwich and enjoy!
