I made this tonight for Sunday dinner and it was easy and OMG delicious! I made two pans, one with the pork tenderloin and one with a big fat chicken breast. (my daughter does not eat beef or pork) I also added baby carrots, mushrooms and instead of the gourmet mixed potatoes (which would have cost me 7 dollars, I bought two skinny sweet potatoes and about 5-6 mini red bliss potatoes. Using the red pepper was a great choice. This the second recipe I have tried of Lauras that I was WOW'D by! Thanks Laura! You rock girl!!!

If your pan is big enough, add the veggies to the pan as well and allow them to develop some color. 4) Pop the whole thing in the oven and roast for about 15 to 20 minutes or until the pork is cooked to 150 degrees when tested with a meat thermometer. this looks good but jesus christ that pull apart bread looks like the most delicious thing i will ever eat in my whole life and i watched it while i was high and literally its been on my mind ever since and i must make it today!!!

OMG Laura! You hit this one out of the park! First, because I love pork anything...and second because often the potatoes are better than the pork! Hahahaha! Hard to loose unless you don't eat pork...easy to switch to chicken breasts. ...I've already figured 3 more things you can do with this...wrap the pork in bacon, brush the pork with liquid smoke, or before putting it in the oven, fire it on the BBQ grill instread of the stove for the same length of time.

Prep time: 15 mins
Cook time: 30 mins
Ingredients:
1 lb Pork Tenderloin
