  • PORK ADOBO is a popular Filipino dish which has rich flavors of pork in soy sauce and vinegar. There are different ways to make adobo, this version contains tofu and oyster sauce which infused a great flavor in the adobo sauce. Your kids will definitely love this. So quick and easy to make.     Here is how to make PORK ADOBO with TOFU:
    PORK ADOBO with TOFU RECIPE:
    Ingredients:
    2 lbs pork, cut into chunks
    12 oz tofu, cubed
    1 large onion, sliced
    7 cloves garlic, minced
    2 tbsp soy sauce
    2 tbsp oyster sauce
    4 tbsp vinegar
    3 dried bay leaves
    2 1/2 cup water
    2 tbsp brown sugar
    1 tsp salt, divided
    1/2 tsp pepper, divided
    4 tbsp oil
    chopped green onion for garnish
    Directions:
    1. In a pan or wok, heat oil over medium high heat. Fry tofu until golden brown. Remove from the pan and set aside.
    2. In the same pan, sear pork until browned on all sides. Season with salt and pepper. Remove from the pan and set aside.
    3. Remove oil but leave 2 tbsp. Add onion, sauté until translucent
    4. Add garlic, sauté until lightly browned.
    5. Add back the pork. Stir until well combined.
    6. Add soy sauce and oyster sauce. Continue to sauté for 3 mins. Stir until all meat is covered with sauce.
    7. Stir in water, pepper, dried bay leaves and brown sugar. Stir until sugar dissolves. Cover with lid and let it simmer over medium heat for 30 mins or until pork is fork tender. Stir occasionally.
    8. Pour in vinegar. Do not stir and let it simmer for 3 mins. After 3 mins, stir until well combined.
    9. Continue to simmer uncovered until sauce thickens. Stir occasionally.
    10. Add back the tofu. Stir until well covered with sauce.
    11. Continue to simmer until it reaches your preferred consistency.
    12.. Garnish with chopped green onions.
    13. Serve and Enjoy! Best served with steamed rice.
