Collars are the best cut and the most underrated definitely a locals cut. Super great piece of meat and awesome fat content. Great video. About too cook up some yellowtail collars from down here in SoCal.
I followed this recipe... it was on point my family and I loved it. The only thing I changed was I baked it at 375 for 10 minutes and broiled it on high for 5. I also added a little more serranos. Thanks you for showing this.

Awesome catch. This time of year, you should be able to mooch some Salmon instead of trolling. We used kill them mooching along the Marin Headlands and around the corner (Muir Beach to Rodeo Beach)

We were fishing in that area before, the notorious seals always outsmarts us, grabs our salmon and when you reel in it's only the head of the fish is what's left in the hook. Good thing the seals are gone now.
