maybe because they are in public during personal time. They spend most of their time either in private at hybe or in public with fans. It's rare for them to have personal time where they can freely explore outside without having to disguise themselves. They often have to go everywhere with the managers or even something as simple as eating out alone can be difficult (since they can get spotted by fans). Even sakura has said in the past before, she orders delivery so they don't have to go out to eat (even when izone met up this past oct, they booked a room at a private room in the restaurant so they could meet in secret).

I think because this was for a variety show they never filmed for before, the filming crew and staff must be different people they never met so they probably feel awkward to act like themselves. I felt that they were a bit awkward in Running Man too. But in Leniverse and Day Off, they're completely familiar and comfortable with the staff so they can go all out and truly be themselves.
Kind of reminds me when I have to do a presentation or sales pitch with my coworkers, we all always end up interacting awkwardly with each other in front of the clients despite being really close and then laugh about it like crazy after the clients leave.
