And also, the COO is well informed about his food, and a huge thanks to his Mother-in-law (I'll refer to her as Didun ❤). Didun cooked everything perfectly! I'm so glad to even watch how she maintained the authenticity of, say, Data diye Begun Bhaja. Even in our homes people just chop the Bengun into smaller pieces for convenience. Delicious homemade Bengali food! ❤ Thanks for not going into some fancy restaurant. They just always modify stuff and it's never the same as the food like one's Didun/Thamma/Maa would cook.
The funny thing about bengali cuisine is.... Aloo goes into everything, but is not mentioned in the name of the dish.... Bongs have a spiritual connection with aloo and bhat ... Its normal for us to have 7 items minimum. Daal has to be accompanied by a bhaaja, followed by a veg dish, then comes two types of fish at least, then chicken or mutton, a type of chutney (like the tomato one here) followed by payesh, doi and mishti. And has to be eaten in that order 😄. We bengalis live to eat.

You know being a bengali who has lived most parts of his life in Haryana, I can say Punjabi food is my weakness. Especially dal makhani. I can leave non vegetarian food forever if I get some good dal makhani. Shahi paneer comes next.
I swear when i had that dish in Kolkata for the first time a few years back, i couldn't wrap my head around the fact that they had put a fish head in a daal ! I was skeptical about having it first but I am glad I had it ! It was good, though I couldn't eat the fish head properly. All the other Bengalis looked at me with such disappointment, I felt like I had failed miserably!
