- Today, as the second episode of "Levain cookie", the best cookie in New York!
I'm introducing the dark chocolate chip cookie recipe.^^
🍪 Ingredients ( For 1 cookie, 170g / 5~6 pieces )
All-purpose flour 200g (1.5 cup)
Cake flour 100g (1 cup)
Powdered cacao 50g (1/2 cup)
1 teaspoon of cornstarch (3g)
3/4 teaspoon of baking soda (2.5g)
1 teaspoon of baking powder (4g)
Half a teaspoon of salt (2g)
Cold butter 200g (1 cup)
Brown sugar 130g (3/4 cup)
White sugar 70g (1/2 cup)
2 eggs
Chocolate 300g (Hershey dark 150g + Dark couverture chocolate 72% 150g)
🍓 How to make it
1. Sift flour, cacao powder, starch, baking soda/powder, and salt to make them soft
It gets even softer if you sift twice.
2. Cut the cold butter into a small cube shape.
3. Let the egg out and stir it 30 minutes in advance.
You need to use a warm egg when making the cream so that it doesn't get separated
4. Chop the Hershey dark into small pieces and scale it with the Dark couverture
Put 50g less if you use Hershey milk chocolate
5. In a big enough bowl, whip slowly until the butter and sugar cuddle up together, and whip with a fast speed for 4 more minutes..
6. Add eggs in 3 separate steps, and whip fast so that they don't separate.
For about 2~3 minutes, until the tone goes up by 1
7. Add the powders that were sieved, and mix it lightly until you still see 20% of unmixed powders
8. Mix it with the chocolate
Mix it lightly so that they don't overly mix.
9. Settle the dough in the refrigerator for 2-3 hours...
10. 170g of dough per cookie. Place it on the pan after rolling it into a ball.
Give enough space between the cookies ..
11. Settle the panned cookies for 30 more minutes in the fridge. (Optional)
12. Heat up the oven to 200℃ (392℉) and bake it at 180℃ (356℉) for 10 minutes. Then it's done
13. You can have the cookies after resting it for 15 minutes while it's still warm or you can enjoy it after completely cooling it down ^^

For those who do not have a convectional oven: I tried baking the 170g dough on 425F in a regular oven for 13 minutes and it worked surprisingly well! The outside is crispy while the inside is gooey and halfway done. This is indeed a great recipe, thanks!!

This is the best cookies recipe I found in RUclips. I tried many different recipes but nothing come close to this one. Thanks for sharing this detailed recipe. Till now I made the cookies with this recipe more then 10 times and every time they turned out perfect.

@@sehernaveed only the top is supposed to be brown and crispy. The middle should be gooey and chewy. This is not your usual type of cookies. Levain cookies are different.

so i made this recipe, with a few tweaks. i mixed the cocoa powder with the wet ingredients, added a teaspoon of instant coffee (mixed with water), added vanilla and semisweet chocolate chips, and made them a little smaller. they came out so good!!

I used to live on the same street as Levain bakery in NYC in the late 2000's. It was literally right down the sidewalk. It got me into trouble because I bought cookies from there all the time. They truly are so decadent. I even worked there for one day, but decided it wasn't for me. I've been craving this cookie so much. I've been living in LA for like three years now, and only recently did my partner surprise me with Levain cookies. He found a shop exists here! I am over the moon with this knowledge ^^ But also, I really wanna try making one myself. Thanks for this video! It's extremely wholesomely done

I've tried your recipe and even not using real butter like yours (since in my place butter is a hell expensive) those cookies tasted great! 👍
Thank you for your video and recipe. I just tried making this today exactly as per instruction. The taste is nice, but i weigh each cookie 90 grams and baked it on convectional oven (preheat 200C, bake at 180C) for 14 mins and they are still too soft, even after cooling completely. They are barely crispy on the outside. I wonder if these cookies are meant to be majorly cakey and not chewy/gooey?

Just made these cookies, comes close to Levain from what i remember. Please weigh everything in grams will come much better . P.S. i baked them for close to 17 to 18 min at 356F and they came out great . still gooey inside after they cooled. Really GOOD. And i am a retired chef.

This video is amazing! I can’t wait to try it out! Btw, I noticed from your reply on other comments that you used convection oven. Mine is also convection oven, however I have the option to turn on the bottom heating or top heating or both of them, in addition to the convection fan. Can you advise if I should turn on the bottom heating+fan only or should I turn on the bottom heating+top heating+fan altogether? Thanks!
i made this today and it was legit!! I've never tasted Levain cookies before but this recipe itself was damn good.
Initially i was quite afraid to try this out as the video was in korean so I was afraid i might mess things up or miss out on some information..
BUT SO GLADD I MADE IT!
Instead of 170g per dough i did 90g each. Baked for 12Min in my oven 180 deg, preheated 200 deg and cut the white sugar by 20g

Did you use a conventional oven or a regular one? I just tried one with 90g in a conventional oven and I couldn’t figure out the right time and I tried 8 minutes but it started to smoke after 6.

Hey not sure if it's bcz of the translation, but I read the caption and it says "preheat the oven to 200c and bake the cookies at 180 for 10 minutes". I am a lil confused. What temperature do I need to bake them at really? And does it only required 10 minutes to bake seeing that these cookies are really big?

I made them. The taste is excellent but they seem to need more flour, they are too soft. And they definitely need more time to cook, probably 15-17’ at 180C.

제가 실수로 버터에 설탕과 계란을 같이 넣고 섞었는데 그게 혹시 너무 묽어진 이유일까요.
180도에서 10분 돌렸는데 겉만 익고 넘 물컹거려서요 ㅜㅜ 그래서 10분 더 돌렸더니 괜찮아졌네요.
근데 맛은 있는데 너무 단데 설탕을 좀 줄이면 뭘 더 넣어야 농도가 맞을까요
안녕하세요! 바로 답변을 드리겠습니다.::)
첫번째로 버터에 설탕과 계란을 동시에 넣고 섞으셨으면 아마 크림화가 제대로 되지 않고 분리가 되었을 가능성이 많습니다::) 쿠키에서 가장 중요한 공정 과정이 바로 크림화 인데요.. 버터와 설탕을 먼저 섞은 다음에 상온의 달걀을 3~4차례 나누어 빠르게 휩해야.. 크림화가 분리되지 않습니다. 혹시 크림화 하셨을때 버터 크림처럼 뽀얗고 매끈하게 되지 않고 순두부처럼 몽글 거렸다면 분리가 되어서 쿠키가 구워지더라도 더 기름지고 식감이 무너진 쿠키가 될 가능성이 있으니 참고해 주시구요,, ( 이부분은 링크된 영상을 꼭! 참고해 주세요! 정말 중요한 부분입니다.ㅠㅠ)

그리고 르뱅 쿠키는 원래 속까지 다 익히면 절대 안됩니다. 영상에서도 강조한 부분인데요,, 속까지 완전히 익히면 쿠키가 식었을때 딱딱해질 수 있답니다.ㅠㅠ 르뱅쿠키의 핵심은 겉바속촉!! 식감이라서 갓 구웠을때는 겉은 익고 속은 반숙 달걀처럼 흐물거리는게 정상입니다. 그래야 완전히 식었을때 겉바속촉 식감이 되니 바쁘시더라도 제 영상 꼼꼼히 보시고 만드시면 실패없이 맛있는 르뱅쿠키 만듯실 수 있으실 거에요::))
마지막으로 사용하시는 초콜릿이 다크 함량이 높은 다크 커버춰가 아닌 일반 컴파운드 사용하셨다면 초콜릿의 양을 줄이거나 설탕의 양을 10~20% 정도 줄여서 만드셔야 너무 달지 않게 되니 참고해 주시구요:)
쿠키는 만든 당일 보다 다음날 드셔야 제대로 맛을 느끼실 수 있으니 참고바랍니다.^^❤

아 몇가지만 더 여쭤보고싶은데 중력분을 넣는것은 식감때문인가요? 설탕도 황설탕과 백설탕을 각각넣고 베이킹소다와 베이킹파우더를 각각넣어주는건 무슨이유일까요? 만약 모두 박력분을 사용하고 설탕도 모두 백설탕으로 한다거나 , 베이킹파우더만 넣게되면 많이달라질까요?
