He's actually quite simple. He is a grumpy old man, but by no means an evil character. I don't blame him for being grumpy, seeing as though he always gets attacked by monsters. Slamming the door on strangers...that action alone would have prevented several episodes worth of mishaps. You could call Eustace the smarter one.
He also had a rough childhood that probably messed him up for good. His mother always loved his brother more which is why he is jealous of Muriel's love for Courage.
