🥣 Ingredients
1 Pound of Flank Steak
4-5 Fresh Tomatillos, diced
3 large Sweet Potatoes, chopped into large steak fries
1/4 cup of Fresh Cilantro, diced
1 Jalapeño, diced
2 Carrots
2 Green Onions, chopped
1 Lime
1/2 cup Queso Fresco
Everything But Elote Spice, Trader Joe's
👩‍🍳 Directions:
1. Pre-heat your oven to 375. Add chopped sweet potatoes and carrots to a cookie sheet, add olive oil, salt, Everything But The Elote spice and bake for 20 minutes. Check on them and flip to ensure they are crunchy.
2. In a bowl, add chopped tomatillos, green onions, chopped cilantro and jalapeños. Mix well with a tablespoon of olive oil, salt and pepper. Then add the juice of one lime and set aside.
3. In a cast iron skillet add a little olive oil and cook your steak. *You can season your steak or not.
4. Once the fries are done, top with the queso fresco and green onions and let melt.
5. On a plate add chopped steak and stop with tomatillo salsa and put the fries on the side. Enjoy!
