Reminds me of when I was on a vacation in Thailand. Nasi ulam with a side of crispy fried chicken topped with even crispier fried shallot = best breakfast ever. All for less than 1usd to boot 😍
Nasi ulam is basically Nasi (rice) mixed with ulam (salad/herbs). A different part of Malaysia has a different style. Not to mention different mom has their own recepies. My mom doesn't really use galangals, turmeric and ginger flower (kantan). Sometimes she even omits the coconuts. She uses mostly leafy ulam and salted fish. The result is rice with dark green colour. There is alot of ulam that can be added other than mentioned in the video: pegaga. mengkudu, ketereh (cashew shoot), serai kayu, kadok, mengkudu ulam raja, selom, sekentut, tenggek burung, putat, cekur manis, mata itik and many more.
That was beautiful presentation. Steve's kitchen has made a place in the stomach as well as in the heart ! don't know, I too was emotional ! Those herbs, leaves fish are part of tropical diet. Nice video !
Interested to see the ginger flower. I have never cooked with it. To be honest I am not keen on ginger because I was fed it night and day after giving birth. It is a Chinese tradition but it put me off the strong flavour of ginger. Having said that, I do cook one dish that is full of ginger.
I have never seen it sold in Australia :( Someone is using them up, because we grow great Ginger. Maybe when I get around to QLD, i'll look out for them, they grow heaps of ginger there.. :)

all that build up of flavors only to be tossed cold! I thought it was going to be stir fried and served hot. the idea of cold rice doesn't seem appealing
steve owens i really love your you tube channel but wanted to comment something every important " make sure you wash your hand or use different spoon after you do food or ingredient testing. And also you don't put your hand in main bowl to scoop the foods please think about others hygiene . . Its very rude especially for people in Asia. I think people are you being nice not to tell you off in the show.

The ingredients seem so unique. I have never have heard of many of them. However, they make the dish look and taste good.

I've never tried nyonya style with turmeric,galangal & belacan. Perhaps one day I'll give a try.

Thanks, the flower is so far from the taste of Ginger though, it is truly delicious and a but part of Nonya cooking, I miss it so much..

@@Steve-Owens you can substitute the salted fish with fried anchovies to give more bite to the rice. Yummy too.
