    My takeaway from this- you can pinch pennies and still make nourishing meals. One doesn’t have to resort to ramen noodles and box Mac and cheese , not judging-I’ve certainly eaten them. What we eat is a big part of staying healthy.

    You could use some kale (even the stems) food processed with the sunflower seeds and olive oil to make a kind of pesto to use on your rice or perhaps toast or eggs.

    It's nice to see new ingredients in this type of challenge. Another option for the 7th breakfast could be to divide the last 2 egg omelette in half and add one slice of toast for the last two days. 😃

    Well done! That kale is huge. You can always wash & freeze what you don't use. Then just crumble the frozen pieces into soup. I do the same with lettuce & spinach before it wilts.

    I thought of 2 things more to do with rice: a pilaf adding an additional type of nuts from pantry, caramelized onions, butter, salt & pepper. Making a treat of sweet rice for dessert by adding milk, sugar & butter. Serve warm. If you have those staple items of course.

    Love these videos. They give me a new appreciation for the bounty of food we have and make me more grateful for the money and food that I have. These videos have made me more mindful of food waste and being mindful and intentional about my food purchases. I love a slice of toast with 1 egg and 1/4 avocado mashed for breakfast, it's extremely filling.
    Keep up the great work with the relatable, real content!

    Onions will keep for months if you place them into nylons one at a time, tie a knot between each onion. Hang them in a cool dry place. When you need one, cut one off or untie the knot.. It really works well.

    I grew up primarily in Texas & Arizona my dad was from Illinois he use to give me braunschweiger on saltines with mustard for a snack. once in a while I crave it when I see it at Walmart.

      My 'cheap meat' go-to is always a turkey kielbasa, they last forever and go in almost everything, I can find them on sale often and they are always worth having on hand.

    I love mustard on about everything. My German grandparents served liverwurst. Strangely, I also like a squeeze of lemon on many foods including potatoes, rice, kale and various fishes and chicken.

    Thanks for another emergency extreme week! I love seeing how differently other people put the same puzzle together, so to speak. Onions are a staple for me, they have more vitamin C than citrus. This year I've switched to buying many lot of my vegetables frozen so that I don't have to go out but once a month or less, but fresh onions, cabbage, carrots, and apples will generally last the whole time.
    I haven't met anyone who eats liverwurst here in GA, other than my own transplanted family, lol. I did recently indulge in a sardine sandwich that was also just toast, mustard, onions, and sardines. I haven't eaten liverwurst in years and now I'll have to get some in the next shopping trip if budget allows. :)

    Thank you for posting these videos. I love watching them. I admire you for cooking kale. I’ve never been able to enjoy. I knew someone who dehydrated them and ate them as chips. They were a bit salty, but ok. I tried kale in vegetable soup, but added too much and it over powered the soup. Kale for me at last resort. Thank you for teaching us!

    My youngest is 41. I took them grocery shopping with me. You can get lots of carrots, eggs, rice, oatmeal, pasta, etc. Or just a little of the fancy prepared
    foods they showed on TV. One is a great cook. Two are smart with money. If the third didn't look like her grandpa, I'd swear she was a changeling.

    I love how balanced your meals are. I would love to see a one month emergency family haul that gave allowance of fifteen or twenty dollars for spices or condiments alone...so you could enjoy your favorites. It would be fun to hear a vote of what your family favorites are from what you make. It is easier to make a variety of meals from a budget for a family than from an individual...and you do them both so well!

    I am a diabetic. So far the rice, grapes and bread are not in my diet. I eat a lot of cabbage though.....😊

      You can eat the rice, just 1/4 cup. The grapes you can eat, small portions, wheat bread is good for you just in moderation. I’m diabetic, too.

      Try lettuce leaves to mock the bread in sandwiches. Riced cauliflower to replace the rice. Blueberries to replace the grapes. All are within the price points of the original items. P.S. I'm a cabbage lover too!

    The egg dish with avocado looks really great. I love those sauteed onions. I would probably put that on top of a tortilla with some cheese. It's very straightforward of you to critique your dish and make changes on camera instead of acting like everything is perfect. That looks great

    We only had home ec in 6th and 7th grade. We baked cookies and sewed something. I should have paid attention to how to read a recipe. I didn't learn that until 2010 when I moved into this apartment, and a friend told me how to do that. We also had wood shop: I made a clock and a bridge and a napkin holder.

    So many people are going hungry. I’ve seen long lines of cars waiting at the food pantries. Some people are leaving with nothing because they ran out of food. On the news they reported that one in twelve adults are suffering food insufficiency.

    If you don't want to eat the nuts with the kale, you could saute some onions and add a can of white beans. Every once in a while I eat this with spinach.

    Fried kale and eggs is a regular breakfast here...but I have a garden and chickens.
    Kale is easy to grow, its gone wild here and even survives WI winters to reseed in spring. Plant it two years running and you will never run out. Knock snow off, pick it in winter too. I consider it an emergency survival garden staple, it takes care of itself. .

    Avocados are the food of the Gods! I try to eat them as much as possible. They are also an anti-inflammatory food. I loved home economics too! Do they still teach that today? We learned everything in home ec as far as running a household, but I went to school when penny loafers were in style, so, a long time ago lol. Your videos are informative and fun to watch. I do need these types of videos because my income has gone down greatly. Thank you for your videos!

    I like your budget videos; I tinker with them to suit my family's need (I have picky eater at the table) and that first egg dish is something I hadn't considered but now will. I do not like avocados myself, so I would swap them out with the grapes, since it would be like eating jelly with the omelet, and that is precisely how I like eggs. Thanks.

    I enjoy watching these. It also serves as a reminder for portion control. I have seven children, half of them are teenagers. It gets difficult to meal plan because I have spoiled them with so many choices throughout their lives. Not to mention unlimited portions, though they do need more calories due to sports and being active.

    First of all.. you made some good iron-rich choices for a person with anemia, such as myself. Secondly.. I LOVE braunschweiger. I grew up on it also. A few weeks back I made a pate using it, combined with cream cheese, fresh mushrooms chopped and cooked in butter, grated onion, Worcestershire and a dash of cayenne.. yum!

    I live in Southern California. My mother is from North Carolina, and until a few years ago, the only time we had liverwurst was when we would go visit my grandmother in Kannapolis. An Aldi was built in our county about 3 years ago, and she buys liverwurst there... Love your channel!!!

    🤤 I agree! Rice with EVERYTHING!!!!! a leftover bowl of rice with an over medium egg and hot sauce or a smidge of ketchup is comfort food... that avocado or jalepeno would be nice too!
    I’m also a HUGE fan of peanutbutter rice lol. I overboil it and eat it like oatmeal 😋

      Can I ask you how do you make peanut butter rice ? I bought a jar of peanut butter today with the thought to stir it through rice. How do you do yours ? :)

    Quaint, this morning I thought "gee I wish Quaint had another one of those budget videos today" and here you are. I enjoy your food combinations because they are different than I'm used to and I get new ideas. I'm not much on kale though, could you suggest an alternative 🤔?
    I ate liverwurst and cream cheese sandwiches as a child in Los Angeles.

      Wow wurst and cream cheese. I think that could be really good. I must try it! An alternative to the kale would be whatever greens are cheapest to you (if price is an issue). If you like a mild tasting greens I suggest fresh spinach leaves. Another tasty option is cabbage. You can also do collard greens and turnip greens, but the latter is very strong tasting and not everyone likes them.

    If you see over ripe bananas, snag them. Mash them up - make up pancake mix normally, add 1 tsp vanilla and 1.5 mashed bananas per cup of pancake mix you use. You are welcome in advance. They are AWESOME!

    Altogether great job! I can see using this list on a limited budget and adding just a few dollars for a great week. We have local discount stores that have some great deals on fresh veg and fruits. I can get a 3# bag of apples for 1.99 and Bell peppers for 50 cents each, along with weekly specials and also a good markdown shelf. I have been following you and especially loved when you did the breakfast of pancakes with yogurt and apple slices. Thanks for sharing and have a great holidays.

    Those hungry college student days were a great inspiration for learning to eat on an extreme budget. Extreme by mainstream standards but not extreme by emergency standards. Having a pantry stocked with months or years worth of shelf-stable foods is like money in the bank for hard times.

    Nice video. I will definitely try these recipes, especially the sunflower and kale one. My husband and I were amazed with adding water to scrambled egg thing. That's something we've never seen done in our area of the US. Everyone here adds milk but I just like mine plain since I'm lactose intolerant.

      Megan -- I still use water most of the time. Water makes eggs fluffier. Milk makes them creamier. Both work but I figure why bother getting the milk out LOL

    This was wonderful as always. Would you please consider doing a video with your version of a to-go breakfast bar? I absolutely love to see various takes on the at-home breakfast bars and I am sure you could do an incredible breakfast bar without spending a whole bunch of money since many of your videos are about how to shop and create delicious and nutritious meals even on a tiny budget. Thank you so much for sharing. These videos are extremely helpful.

    I find other supermarket's cheaper in price than Kroger's. I like the crisp veggies, such as how you made the jalapeno pepper! I hope you do a vegan budget video one day. Enjoyable, thanks.

    You are my absolute favorite at these kinds of videos!!!!! I know I have a big family but these are still extremely helpful for us. I had my kids do a $60 challenge for a family of 8 fir a week and they actually did a really good job!!!! They watch you with me 🎄❄️😊

    Love your videos. How about another day of just avocado toast for breakfast and add the eggs , hard boiled and sliced, to the kale and rice bowl. I like a light breakfast and heavier dinner and this would rearrange the calories a little

    Love your challenges! I live in NE TN but grew up just S of Chicago. I am very familiar with braunschweiger being first generation American and of German heritage. I can picture my mom picking almost identical items, trading the grapes and sunflower seeds for canned herring!

    I live in Arizona but from Indiana and Michigan. I like making liverwurst sandwiches with onion butter salt and pepper sometimes with mayo. For people that have the 99 only dollar stores they sometimes carry it.

    Braunschweiger isn't my favorite, but mustard helps. My other suggestion would be horseradish, that sounds good.
