  • In this video, So Han discusses fresh White Tea. White tea is raw tea, or tea that never undergoes the Sha Qing process, which would lock in an oxidation level by denaturing the enzyme Polyphenol Oxidase. Being uncooked, White Tea will continue to oxidize, slowly, as it ages. There are many grades of White Tea, typically organized by bud content. All bud teas, called dān yá 單芽 ("Single Bud"), like White Hair Silver Needle, are the highest grade. The middle grade is yī yá yī yè 一芽一葉 ("One Bud, One Leaf"), such as Bai Mu Dan. The lower grade is called yī yá liǎng yè 一芽兩葉 ("One Bud, Two Leaves"), such as Shou Mei. Though it originates in Fujian, White Tea is made in many other regions of China, including Sichuan, Yunnan, and Guizhou.

    A few interesting points:
    -White tea was traditionally for a long time lightly charcoal baked after drying. It’s nearly impossible to find this style now, though it’s still produced by a few places if requested. Unfortunately, most places do not know how to do it properly anymore and will give you odd looks if you even suggest it.
    -White tea from Fuding has been increasingly more standardized and the processing is becoming more industrial to provide Fuding white tea in higher yields at high prices because the name carries so much weight. Some cultivars are being used that also bud earlier for production but produce poorer quality tea. Many rich Chinese tea drinkers snatch up the highest quality tea very fast. This means the name Fuding is becoming less associated with the best cup of white tea and other areas are rising.
    -Purple tea is full of those anthocyanins that give it the purple colour and potential health benefits, however it’s also a compound that causes astringency. This means many purple teas can be quite astringent if not brewed carefully. Of course, some are more forgiving than others.

    I mentioned I've been wanting to learn more about white teas (i knew nothing) to a couple friends. They ended up gifting me a white Vandham sampler for Christmas.     Just found this channel a couple weeks ago and watched every video and eventually bought a tea set, board, and of course- tea. Love this channel. In the Tibetan Buddhist tradition I am a part of we have a term called "Drala" which is the elemental magic inherent in the phenomenal world that manifests as elegance, joy, and a sense of light handed humor- it's similar to the principle of the yixing teapots taking on the enriching quality after many brews, a depth of experience develops. So Han brings out the elemental magic of tea with such simplicity that it's inspiring, it's awesome! Thank you!

    Aged Shou Mei is fantastic and probably among my favourites after Mi Lan Xiang, although my friend's five year old daughter refers to it as 'uncle's Vlad's yard leaf tea'. Not exactly 'Unicorn Contrails' as far as names go, but if I ever start a psychedelic desert rock fusion band, 'Unicorn Contrails and Uncle Vlad's Yard Leaf Tea' is right up there as the top name choice.

    Very happy to be able to watch a new video from you today! I drank some lovely organic wild Baimudan while watching. I rarely think of drinking white tea, so this was a good incentive to look through my white tea basket and pull out a sample.     Age bai mu Dan and aged shou Mei have given me a real love for white tea. It is wonderful. I have yet to try or find an aged silver needle. I might just have to age some myself.

    Wonderful video!
    I would like to make a couple of points:
    The unique factor that makes white tea unique is its processing where the leaves are dried in the sunlight. The tea is actually slightly fermented/oxidized so it is not the same as green tea.
    According to Chinese medicine white tea is an extremely cold thing to consume, that is why the sun-drying aspect is so important. The natural light helps to counteract the coldness within the tea. But this is also why it is so important to buy white tea carefully, many people just dry the tea with artificial lighting for convenience.

    I too am someone who used to say I didn't like white tea. Like you, I had also only had poor quality white tea that tasted like water unless brewed extremely hard and then would be bitter. Not enjoyable at all! It wasn't until less than a year ago that I encountered aged white tea, and was it ever a game changer! It quickly shot up the ranks to be one of my favourite things to drink and opened the doors to me trying other forms of white tea. These days I can even say that I enjoy the occasional top-notch fresh silver needle, even though I'm still more inclined towards the aged leafier grades. Also, moonlight white is amazing young or aged. The second two teas featured here are very intriguing; I guess I'll have to look into trying them out! Thanks for a great video. I feel like I learned a lot! Time to go brew some (white) tea.

    I have to say... White Tea has become one of my favorite teas. I love aged white pu er. White teas made in Yunnan & pressed in cakes! I tasted a piece of a bing from 2009!
    Very expensive. Aged white teas, bings & such are becoming treasure! Super delicious 😋 So many teas. Such a short life.
    I'm going to China one day to do a tea trip!
    I need to find a farmer like Farmer Leaf that makes aged white tea cakes!

    "I was first served white tea by someone in Fujian" I don't know why, but the whole aesthetic of tea is summed up in that rather than, "I first had white tea served to me." Maybe a grammatical quirk, but I think it really sends home the message learning a lesson and a bit of humility.

    I love silver needle, white peony and aged sho mei. I love the way you describe the differences. I had no idea that they were so similar and different depending on when they were picked. I’m going to order my silver needle this spring from Yunnan sourcing, last year I went with Mei Leaf in London. Do you sell silver needle?

      When I drank the basic silver needle from Mei leaf I made sure to write down how I felt. “Extreme brightening in my vision and mood, a brightening that came from within and moved around my whole body! It was an amazing feeling pure and crisp. “. Then went to the local health food store and gave their version of silver needle a try and the results were nothing like Mei leafs silver needle. No brightening or uplifting feelings. I’m looking forward to getting some fresh silver needle this spring. I want to try a new tea company because Mei lead only has free shipping on over 100$

    You mentioned that you can get 10 steeps from this in your gaiwan. That's great if you've got company. If you are brewing for yourself, how long would you let used leaves sit? Red tea leaves have a short expiration.

      How long I would let wet leaves sit and still be able to brew them some more later:
      Green and yellow tea, Anxi Oolong - 3-6 hrs
      Red Tea, Wuyi Oolong, Phoenix Oolong, Fresh White Tea - 6-12 hrs
      Aged White Tea, Pu'er, Hei Cha - Up to 24 hours

    Hey , long time no see. I like tendon relaxing tea... kinda like taking a sinew soothing sip ! :-D Tendon relaxing is definitely a past time in our house , I like plants that feel like I just had an internal massage.       Yes thank you Nicholas - these are some of the many paths that the tea must travel to get to us, and through us, to you. And all along the way West China Tea does its best to take care of everyone involved in the process. It does make some of the tea a bit more expensive, but is worth it for the long term health of the industry. You may notice, though, that West China Tea gets specifically very affordable prices on Pu'er due to a very close friendship with our farmer Li Shulin

      @@nicholas389 thanks for your elaborate explanation! I am aware of those things, I simply thought the teas of WCTC are about double the price of other high quality teas I buy that go through similar stages. Maybe WCTC are better? I should give them a try!

      @@AhimSaah Compare Mei Leaf & Farmer Leaf to WCTC Teas. Pretty comparable.
      I myself order when I can, from WCTC. Their teas are very high quality & you know where it comes from. Tea Cakes are cheap on Amazon & other places that sell bulk. But its just not good. I suggest River Red & their itty bitty Sheng gushu bings. Delicious & makes you feel incredible.

    18:00 I see that you didn't rinse the silver needle. I also usually don't rinse it because I think the small hairs give a nice texture to the tea. Is not rinsing it common practice for silver needle, or did you make an exception?

      I (Erik) also don't wash Silver Needle for that same reason - I like the texture of the trichomes (little hairs) - this is a fairly common practice, but everyone has different thoughts on rinsing teas

    Mister i just used 80 degree . 110 ml water and 1 gr white hair. 3 x steeping . Is that ok like that? Taste is just like : i tast the tea juice coming from the vessels of the tea. I call it "tea juice" bcz its just watertast with a light neutral tea tast.

    I'm sorry if this is a silly question, but how does one influence whether one gets a red or white tea? Have I misunderstood red tea processing? I thought the oxidation happened naturally. What is done in red tea processing to induce full oxidation that is not done in white tea? Does breed/cultivar also affect the tendency to oxidize faster/slower?

      The main difference here is that with White Tea, the tea is withered (usually out in the sun), which will slow the oxidation process to a near stand-still, allowing it to oxidize slowly, over years. With red tea, the oxidation process is usually helped along by a leaf-massaging process. Furthermore, Red Tea does undergo the dry roasting process known as Sha Qing ("Kill the Greens"). I can't say I know the specifics of how breed/cultivar will effect oxidation speed, but I imagine there's some room for comparing/contrasting there for sure.

      I think most of our kettles are either Ulalov (black ones) or Elementi (chrome ones). Just regular size - nothing special.

    Great video. Just a quick question about grades. You mentioned Bai Hao Yin Zhen, Bai Mu Dan and Shou Mie. I thought there was another grade above Shou Mei called Gong Mei? Or is gong mei a subclass of one of the other grades? Also, I quite enjoy yabao and have seen it listed as both puerh and as white tea. Is one of these more accurate than the other? Thanks again for the fantastic content.

      Gong Mei, generally speaking is a high grade of Shou Mei and means "Tribute Eyebrow" - it's generally produced from Cai Cha plants, which are neither the traditional Da Bai or Da Hao breeds and were originally used to make Red Tea

      Ya Bao is a sort of outlier in the Sheng category - usually it is produced like white tea, in that it is not sha qing'd - but can be cooked.

      @@TeaHouseGhost Thank you for the clarification. I am really drawn to the hint of pine resin I get from some yabao. My guess is that it comes from extra sap being drawn in for branch formation, but that is only conjecture. Wild purple yabao is particularly good, albeit hard to find. I just noticed that you guys are located in Austin. I will definitely have to stop in the next time I pass through.

    The most amount of caffeine is in the first leaf NOT in the buds. The buds are armored, they don't need that much caffeine to protect, but the first leaf is very delicate so it needs the highest dosis of caffeine possible.

      @@TeaHouseGhost Caffeine is in fact just a poison for insects. The insects die if they get a too high dosis of caffeine. One bite and the bug, grasshoper etc. will never touch a tea plant again.
      By the way, that's the reason, why high altitude tea is often times better than lower altitude tea, cause there live less insects. Less insects means less stress (and less need for pesticides), therefore also less caffeine and an even more gentle taste^^

      It is not! Pan Long is from the Phoenix Mountains, on the other side of China from Sichuan, where Inner Sun comes from. Inner Sun tea master's name is Heng Yi. Pan Long tea master's name is Lin Yao Bin

    Drinking a 2021 _Bái Háo Yín Zhēn_ (白毫銀針, Silver Needle) while watching this.
    I used cool water, and did the _Jìn Rùn Pào_ (浸潤泡), but my Silver Needle brewed up yellow-green right off the bat.
    The liquor doesn't taste like water; it does have a steam-pressed herb-like fragrance and taste, with a faint sweetness.
    Is my Silver Needle crappy?

      No idea in terms of the quality, but it definitely tastes good to me.
      It's not cloyingly sweet, probably could have come out better with some more sun-drying, but tastes soft, herbal, and, in my opinion, good.

      P.S. I went to a tea house to drink some proper _Bái Háo Yín Zhēn_ and to compare it with my own. The verdict is that my _Bái Háo Yín Zhēn_ was a little yellow-green, but up to par for every other criterion.

    Maybe i dont do the correct brewing of the white hair tea. But i try to understand tea psychology of this tea. Maybe it sounds strange but. Its like the buds of the white tea are like 4 year old child with a 4 year old body and soul. Its pure undeveloped tea with pure life and energy. I cant expect much character of this tea bcz its still a young child full of pure life and energy. Maybe i am wrong. Dont know. Its the first time i drink this white hair and being mindfull . I also have tasted the white peony now at 1 gr. 110 ml. 75-80 degrees. Tast to me like: its pulling and pushing me , it first a flow of no-taste ; light bitterness;tiny bite sweetness; ending with a bite freshness; . Strange tea. Maybe i am doing something wrong. Thia tea gives me the feeling of being stressed out during childhood. ( i become too much a tea psychologist now)

      @@jejehdh it's got that sort of honeysuckle-ish textbook floral flavor of many rolled jade oolongs from Anxi/Taiwan regions, but its distinction is a sort of balance between the florality and slight fruitiness (like Tieguanyin, but with more sunshine, not so dark and mysterious like root mountain or perfumy like hairy crab) and a generally uplifting Qi.
