The first part (Hyrule Castle's theme) plays every time you enter Hyrule Castle. The second part (Ganon's theme) plays when you're about to fight Ganon, in the final battle.

The begining is The original Hyrule Castle theme that Debuted in A Link to the Past, it has been used in different ways throughout the series serving as the Castle theme in most of the 2D Zelda games, if you've played Breath of the Wild yet than you might recognize that they brought it back as King Rhoam's Theme aswell.
The specific composition in this video is a Piano Cover of the Theme that was used in Twilight Princess. Nintendo Mixed the Castle theme with Ganondorfs theme, thats why it fades out as the song moves forward and the slow rising notes cut in later on
