Shrimp and Rice One Pot Meal

  • RECIPE: anitacooks.com/recipe/shrimp-... Lodge Pan in this video: amzn.to/2pbjJ6e Hi Guys, today I'll show you How to Make Shrimp and Rice with Peas in One Pot for a quick, weeknight dinner. Very simple ingredients make this dish easy to put together.
    Use dry measuring cup to measure rice. Use a liquid measuring cup to measure stock. Rinse rice with cool water until water is clear. Drain well and set aside.
    Peel and devein shrimp. Wash and pat dry. Add salt, ground black pepper and garlic powder. Mix well.
    Heat olive oil in a wide pan. Add shrimp in one layer. Cook 2 minutes on one side for large shrimp. Turn over and cook 2 minutes on the other side. Remove shrimp with slotted spoon and set aside. If using smaller shrimp, cook for less time. Do not overcook shrimp.
    To remaining oil in pan, add chopped onions and sauté until soft. Add chopped garlic and cook for a minute. Add well drained rice and sauté for 4 minutes stirring frequently to toast rice. Add chicken stock, salt and ground black pepper. Stir and cover pot. Bring to a boil. Then turn down heat to medium low and cook for 11 minutes covered. Then, add thawed green peas, shrimp with any accumulated juices, lime juice and butter. Mix and cover. Cook 2 to 3 more minutes until rice is done. Stir in chopped cilantro. Serve with lime wedges to squeeze over dish. Indian Mint Chutney also goes well with this rice dish.

    Thank You for this recipe! Tried it w/some tweaks (sub. cilantro, peas and lime for spinach, frozen chinese vegetables and lemon) and it was a hit! Will definitely make again. 🤩🥳

    The enamel finish on your new "Lodge" pan will last longer if you don't use metal utensils. I recommend silicone utensils. Thanx for the recipe...looks delicious.

    Wow, this was a great and quick meal. I'm spanish, so you know I had to tweak it a bit. I added caribbean seasoning (sofrito) and let the rice cook a little longer because I use long grain rice. It came out amazing. Thank you so much. I scored points tonight, lol!

    You have a beautiful pan, I would have used a wooden spoon to stir things up. I wouldn’t want scratches on my new pan. But to each his own. Love the recipe.

    Great recipe, but why do you use metal utensils in an enameled pot, you will eventually have scratches that will ruin the surface?

    Hi Anita, very interested in make this meal but you haven't given the quantity of the ingredients eg. 1 cup of rice , how many grams of prawns etc , thank you so much

    OMG I could never eat this! Cilantro is a no no for me. I tried it with several dishes and the smell and taste. No. I would, though, make this dish minus the cilantro and peas. We have a lot of shrimp. Always a freezer full with boats coming in daily selling it fresh. Anyway. It reminds me a bit of my brown jambalaya, no tomatoes.
