Hi Thyda seeing you shopping at Khmer ‘s market with all fresh vegetables and meats , makes me want to cook.
I tried it out today (using what I saw in the video and some snippets of speach google translate was able to grasp). I used garlic and chili for the basic paste, one long red pepper for the squish added little later, a little sugar, a little oyster sauce with some water and a bit of soy sauce (instead of salt), 500g of minced pork, 500g of bamboo shoots, and a bunch of sweet Thai basil leaves. Also added some Kampot pepper which I use for pretty much all my cooking.I waited for the pork to be cooked, added the bamboo shoots and left them in to be still "al dente" before adding the basil.
I think I will need another round to be satisfied with the result. I have that feeling that I used too little garlic (I had about 8 gloves), also the red pepper was too large and produced far too much water so that in the end the pork got cooked rather than stir-fried, hence I should not be using a pepper of that size. Apart from that I feel that some spice is missing, but I can't quit make out which one it is. Any hint appreciated ;)
