      Thomas, at 4:57, you said you could steam broccoli to break down the raffinose, but still have the health benefits of the sulforaphane that broccoli provides, but *this is incorrect.* Sulforaphane is produced when the cells of broccoli are crushed such that glucoraphanin, the precursor of sulforaphane, reacts with myrosinase, an enzyme that gets released when the cells are crushed. But *heat deactivates myrosinase, so cooked broccoli actually will not give you any sulforaphane at all.*
      Three minutes of heating broccoli at 60˚C (140˚F) is enough to destroy over 90% of the myrosinase in broccoli; steaming it, which exposes it to even higher temperatures, will destroy myrosinase even more thoroughly. See the 1999 paper by L. Ludikhuyze et al. titled "Kinetic Study of the Irreversible Thermal and Pressure Inactivation of Myrosinase from Broccoli (Brassica oleracea L. Cv. Italica)".
      If you cook broccoli, or any brassica vegetable, you will not be getting the benefit of sulforaphane. The only way you can get sulforaphane and cook the broccoli is if you chop it up, leave it for 10 minutes for the myrosinase + glucoraphanin reaction to occur, and then cook it. The sulforaphane is somewhat heat stable and can survive modest cooking like steaming, but the enzyme needed to make it is not.
      Alternatively, you can cook the broccoli, and then serve it with raw mustard. Mustard seeds re-introduce myrosinase, which can then produce some of that sulforaphane, since glucoraphanin is heat stable enough to survive steaming. But if the mustard has been cooked in any way or has been pasteurized, then this trick will not work.

    I suffered with IBS for decades, just figuring it was part of life. Once I stopped eating processed foods and steamed my vegetables, the IBS symptoms diminished markedly. Also, I now drink very little to no milk but do eat quality cheeses.
    Alternating leafy greens (with vinegar) with cruciferous vegetables works very well too. And drinking lemon water in between meals does wonders.
    You CAN control IBS. It just requires persistent lifestyle (stress) and diet changes.

      I also suffered with IBS for many years. Every doctor telling me to eat more fiber eat more fiber. I finally dumped fiber altogether. When I did that I also dumped IBS. No symptoms in years now.

      For me it was getting grains, not just gluten which is the worse issue I have, but also seed oils and lugumes out of the diet.
      Always loved green and yellow beans and bean sprouts, but just one and I look like I am 10 months pregnant and in pain.

      @dawnelder9046 We are all different and have to know ourselves. It's why doctors struggle so much with IBS patients: Individualized, wholistic plans work best, but many give up and prescribe meds.
      I am blessed to have a doctor that listens and is open-minded. He even let me go off my BP meds when I explained that overcorrection of BP can cause glaucoma, which I have. He said, "Fine. What pressure are you shooting for?" I told him 140/90 or less, and he was OK with that. 120/80 is too little for some people, and the Lisinopril was taking mine even lower. I cut my own dosage in half to keep from getting dizzy!

    Human Dietary Fiber: 1/2 cup Hubbard-type winter squash or 1/2 cup pears or 1/4 cup red or black raspberries or 2 or 3 quarters prepared artichokes. (U. of Virginia, and registered dietition and nutritional consultant N.I.H.)
    Every digestive cycle, this provides good gut health. The digestive cycle is how long it takes for fresh beets to show up as red color in the water after digested.
    The information you provide is very good, and especially because you explain it. It seems to me, however, it is to deal with gut problems brought about by harmful practices.
    Our human biological systems do not need a powder or a pill unless we are already ill, even then, not necessarily. It is more essential to bring everything back to function as designed.

      I think ACV is a good idea if you have low stomach acid issues that make breaking down the food a problem.
      Betaine HCL caps do that too.

      Very little Sulphuraphane in broccoli, more in sprouts but you'd have to eat a pound or more daily. Better to by the extract. Your immune system will skyrocket. Next Graviola used to prevent and cure Organ Cancers in Indonesia & prescribed in Germany. Proven over last 70 years ++++

    it would be interesting to compare BROCCOLI - with broccoli SPROUTS.
    My guess is that sprouts have all the benefits of steamed broccoli - but do not have raphinose (sugar).

    Try to eat green bananas separately. Steam it after slicing it and sauté it in a bit of oil with preferred spice
    I take my broccoli half cooked which I sautés with a little spice and salt. Delicious

    Or... You can lacto ferment your broccoli and get rid of most of the bad stuffs, and greatly increase all the good stuffs as well their absorbability.... Funnily, I've also been planning on doing this with green banana as well

    About 8 months ago a doctor (dermatologist)put me on a low dose, 50mg of antibiotics which destroyed my healthy gut. I have always been drawn towards holistic because I know it works.     The more I/we learn about how hard eating raw veggies is on the human body, the more I wonder if humans were ever even supposed to eat veggies raw, or if they were always supposed be boiled, or mashed, or stuck into a stew? (See what I did there?) 🤣
    I wonder if there are any benefits we LOSE from steaming or otherwise heating veggies in a way that won't sap micronutrients? (obviously we know boiling removes some good things in many veggies)...

    Butter has the highest concentration of butyrate out of any food :)
    You can eat as much of it as you want with no ill effects (it tastes great frozen. Always eat it cold because trying to drink melted butter is...difficult to say the least)
    If you don't want to just eat straight butter like us carnivores do, gruyere, bleu, gouda, parmesian, and cheddar are also high in butyrate.
    Sheesh. It's like animal only is the way to go for real lmao

    Generally: when you talk about these nutrients in foods, how well do these nutrients hold up to cooking? In this specific case, do you need to eat the broccoli raw to get them?
    EDIT: I did hear at around 5:00 where you say they are still present after steaming/blanching. But cooking obviously changes food, so not every compound can go unchanged after cooking.

      Cooking general destroys nutrients. Not completely but it does damage the food HIGH heat will destroy everything. The less cooking you do the more nutrients you will get.

      I figure, as long as it's cooked, you can probably get 40 to 80 percent of the nutrients, so cook it how you enjoy it most. If you don't like it, you won't eat it. We are all only human, and being practical is important.

      Actually some nutrients in many foods only become bioavialable when the food is cooked. It could be one of the reasons we started cooking. To make things edible.
      Not to cook meat, were everything is bio available no matter what. But to cook the vegetables are guts are not designed to handle. The original vegetables were not what they are today, and not having the right gut system are ancestors in time of hunger had to figure out how to make them edible.
      A lot of food myths we take as fact, and which have been repeated over and over again are simply not true or dangerous. No actual science behind them.
      Drink 8 glasses of water a day. Even if not thirsty. Because you are too stupid to know if you need water. End up deleting electralights from your body making you sick. And not everyone has the money to buy them.
      How much water you needs depends on a number of factors, including what types of foods you have eaten, how much you have moved and the weather.
      Raw food is always better. Not always. A lot of foods in the human diet need to go threw not just basic cooking, but vast processing, or you die. Cashews are an example.
      The raw is better is based on a idea, not actual science. Someone made up a theory and presented it as fact.

      Dr. Michael Greger reports on science showing that a little yellow mustard, not a fancy one but basic yellow, unlocks a lot more nutrition in cooking brassicas. This makes cooked more nutritious than raw

    So, I made my own super thick beyond Greek yogurt with a half gallon a2 whole milk and half gallon grass fed organic. It's the consistency of cream cheese because I strained it an extra 24 hours. I get a tummy ache/intestinal upset. They say it's because there are so many pro biotic. What say you?

      If you’re using raw milk yes it would be full of probiotics when any type of fermentation takes place. If no raw milk I’d say your intestines don’t like it.

    I just placed my first order for Seed. My son had an aggressive form of cancer and had horrible, very strong, chemotherapy. The first treatments didn't work and his cancer came back. So he had to do more chemotherapy followed by a stem cell transplant. He spent several weeks in the hospital, but, he is finally in remission now for 4 months. All the treatments have totally messed up his gut. We have been doing keto for about 10 years, but, now he can't even do that because his gut just can't digest the food and he spends hours and hours in tremendous pain in his gut. He wishes he didn't have to ever eat. I switched us to primarily meat, carnivore diet. We watched this video and I will be adding broccoli back into the diet. I am praying that Seed will help him.     Broccoli is a cruciferous vegetable. So is Brussels sprouts. Could you get to the same place with them, or any other cruciferous vegetable for that matter?

    Be CAREFUL with green bananas! Rhonda Patrick recently mentioned that bananas contain a compound that breaks down polyphenols. So if you mix bananas with blueberries, etc., you run the risk of losing the benefits of the polyphenols which are possibly the biggest benefit of blueberries.

      Then again, Dr. Mark Hyaman recently said that blueberries were on the “ dirty dozen” list of EWG. Blueberries contain too much toxins from pesticides but you could always buy them organic if you can afford it.

    Tom, Brussels Sprouts are the real deal. Brocolli is Way too expensive, Fiber unpalatable , and Way too much waste with stems. The bottom line is too expensive, too much waste, and low in nutrients. On the other hand, a frozen bag of Brussels sprouts is Very inexpensive, has No waste, and doubles the nutrients.

    I really like your content - but when you start talking about biochemistry, it becomes harder to take you seriously.
    In past videos, you've been positive on bone-in sardines for the calcium content, but then turn around and be critical of calcium chloride calling it a preservative.
    The calcium carbonate in the sardine bones turns into calcium chloride as soon as it hits your stomach acid.
    This is high school chemistry. If you get high school chemistry wrong, how can we take you seriously when you start talking about chemistry so advanced that they don't even teach it in college except to students with majors that require advanced chemistry to graduate?
    And, you've gotten artichokes and Jerusalem artichokes mixed up more often than you've gotten it right. They are NOT the same vegetable. Jerusalem artichokes are a root vegetable from the Sunflower family that is named because it kinda sorta tastes kinda like artichokes.

    I don't complicate my self. I have kefir, I added some probiotics and now I have unlimited probiotics added with kefir. Then I ferment oatmeal whole not refined with kefir, I add inuline and potatoes resistent starch and I create butyrate and many great post biotics for sure babe use maybe in my stomach they don't reach to convert. That's something that feels so good in my stomach and for sure cleans my colon, it'd so therapeutic eat that.

    Funny, I developed GI issues about ten years ago. I ended up falling into the habit of eating celery and avocado with my seafood (cuz it was mostly tuna salad), green plantains chips as snacks, and steamed broccoli with terrestrial meats.
    Green plantain chips are delicious dipped in guacamole, or tuna salad. I like to do avocado tuna salad with them.

    Actually Tony Robbins talks about not just Broccoli but Broccoli sprouts in his book and how it helps deal with this stuff too. Broccoli sprouts are supposedly 50 times higher in benefits. I've been doing a lot of research on Cancer that's how I came across this stuff. The green banana thing I'll have to look more into it. But I do remember hearing some where that apparently in Japan eating green bananas is very common, so maybe my research will start there.
