    Flo, I love your cookbook. I took a trip to Chinatown (Ok, I only live a few blocks away) to go to the Asian Market where I purchased the sauces and wines, dried mushrooms and other stuff. I think with the cost of food you are so right a lot of Chinese cooking really stretches your dollar. Oh and it's so yummy.

    Flo, I really enjoy your shows, the recipes, the presentation and the commentary; you guys really give an unpretentious, easy-to-follow and always educational presentation.
    As a 'student' of linguistics and regional dialect I always have been struck by your clean and precise diction; no Valley girl, no idioms....no clues. You almost sound like an upper midwestern recently minted college English teacher; pure prairie as it were.

      If she wasn't born and raised in the US (not Canadian as there are no "a-boots" or French-Canadian pronounciations ever. I am puzzled but hopefully not too intrusive.

      Thank you for the good natured clarification. There ARE still the matters of if you are left-handed or simply ambidexterous with your mega chopsticks AND did Mister Dude learn to surf before he learned to walk as his speech appears to indicate?
      Much success and will there be a discussion of Moo Shoo Pork someday soon or be identified as being as a genuine Chinese-based dish as, say, chopped suey???

      I am no left-handed although my daughter is. Dude also spent time in California and he tends to pick up accents everywhere he goes. I believe chop suey is a dish created in North America when they needed to use up ingredients on hand, as the literal translation of chop suey is scraps. 😆

    I've never thought of making fried rice with ground beef before. Now I have to try it.
    If you don't have left over white rice in your fridge, like that ever happens, you can steam your rice in a bamboo steamer for about 30 minutes and you'll have rice with a similar texture and dryness to day old fridge rice.

      I made fried rice with minced beef for the first time about a month ago and it was phenomenal! My entire family loved it! I will try this recipe with the lettuce for sure. Thank you!

      If I know i’m going to make fried rice, I will go out of my way to cook it the day before. Rice cooled down overnight in the refrigerator turns into a “resistant” starch, which has a lower calorie count than fresh rice.

    Thats a great idea to fry rice with minced beef. As for iceberg lettuce, we normally put it on the side and eat it raw with fried rice. Sometimes, we will use the lettuce to wrap each mouthful of rice. Will try to cook this dish. Thanks for sharing.🤩

    I really loved the attention you gave to the egg. You didn't over mix it to oblivion. You kept it together, nice and fluffy. More people need to do their eggs they way you do yours.
    For the sticky bits on wok, splash some liquid to get them loose from the bottom. But you probably already knew that.

    I love watching your shows and now I cook your easy to make dishes, too. I hear you about how prices are just going up, up, and up. I love making chicken wings...so good. And I heard Japanese gals say they love the wings because there's so much collagen in them. Well, store used to sell for $3.50+/pound and now it's $7.00/pound. That's a 100% increase...don't make wings anymore...not with my measly retirement fixed income. Thank you for doing these videos.

    If you are in a hurry or making small batches of fried rice, the precooked bladder packs of rice are ready for a stir fry right out of the package. It's a little more expensive, but the packages are shelf stable and ready to go if you are in a hurry.

    Fried rice is one of my favourite dish to go to do when I am lazy to do the real cooking ...This looks yummy and very simple...Chinese fried rice has all the pack of goodness which consists of protein (meat), green vegetables, (more protein)eggs and the smell of the aroma of wok...

    Stirring any red meat in one direction helps to bind the protein stands for situations where you want minced or ground meat to become "sticky" and bind together. The most common example is making dumpling filling or meatballs. If you want the meat mince to separate and cook more individually, stirring in more than one direction breaks up the protein strands and separates the meat.

    I never thought of using iceberg lettuce in a hot meal. I use shredded white cabbage to add crunch. I put fish sauce - the smelly stuff - in my stir-fries, but only a bit. I've also used Shaoxing wine occasionally, and hoisin sauce.

    Basic, simple, and tasty sounds like me love cheap and plentiful to serve to any hungry people.
    Personally l loved lettuce in salads and sammies until my son introduced a meal with this style* cooked* nd l now find myself cooking it too so yummy.. Your meals are so appreciated in our household nd ingredients are so in my pantry since watching Yr tasty dishes being served up for dude to taste test... Say no more but keep them severed flo 👌👌

    Hi Flo! I really enjoy your channel and your easy going approach to food and life! Your food looks so delicious and I’m planning to make your egg drop soup tonight and look forward to this one and others as well! Just a quick question, I see you use oyster sauce, soy sauce and fish sauce in most of your recipes. Do you use lower sodium versions and what brands might you recommend. Me and my husband are in our 60’s, so we need to watch our sodium intake. Are there other alternatives to flavor your yummy dishes that might be lower in salt? Thank you so much!     I've made fried rice with skirt steak before which helped me realize I don't like the slick texture beef fat adds to the rice, but I bet there's a par cooking technique to help with that, the flavor is still great.

    My favorite fried rice so far is “salty fish, diced chicken, fried rice-:it has lettuce also- in my looooong exploration of Asian food, I’ve come to really like cooked lettuce lol🤷🏻‍♀️👍🏼

    Hello, it looks delicious could you use cabbage instead of lettuce ? I’ve never cooked fried rice before I just go to the local take out and order fried rice with shrimp…I’m going to buy the same ingredients you have shown and try it.. I ordered a wok from Amazon but it was so cheaply made I return it… could I use a frying pan with high sides….I’m currently in search of a nice wok… I have a glass top stove does it matter the type of wok I could purchase? Thank you in advance if you have time to answer my questions. I love your you tube page… you make it look so easy to cook, but I’m sure it’s not..

      If you can find a flat-bottom wok, you could try that. Frankly a good skillet or frying pan should do just fine. Happy cooking! ;-)
      edit: most woks will not work well on your glass-top range... not enough contact area between the range-top and the wok, and the wok will not be stable.

      I have a really neat pan by Betty Crocker. It has a flat bottom and high curved sides, and a handle. I use it like a wok

      You could use cabbage but I’d cook it through instead of letting it wilt and of course, the flavour would not be the same. Agree with Surly Ogre that glass top ranges are not great for woks. We have a glass top range too and I don’t like it at all so I am thankful for my little butane burner. Otherwise using a good frying pan would be just fine. Tracy’s pan sounds like it would be perfect!

    Real life ... I can't make it up. At my local store that specializes in organic food, I purchased, organic parsley and cilantro and the price was $4.00 USD (415) SF CA.. I almost put it back, but I looked to the left at the long line and walked out with my green compostable bag, like ... We collectively are in trouble!

    A question please, does white pepper taste the same as black pepper?

      I'm obviously not Flo, but no. i mean they are both pepper, but I find white pepper to more mild and slightly more floral. I have used regular black pepper when out of white pepper. Only I noticed the difference lol. My kids just shovel it in hee hee

      Hi Myrna, like Susan says, it does have a different flavour. I also find the white pepper to be heatier, like a warmth in the food but not spicy. Well, I suppose it can get spicy depending on how much you add. 😁
