I don't get it fully, either. If you're making a lifestyle change, you should also re-arrange your concepts of what's tasty. Imitating the carnivore catalog is self-defeating. I get that this is what the personal flavor profile starts with, growing up, but if you're going to change the philosophy of what you're eating, how it tastes should conform to the foundation ingredients. Any thing can be made to be tasty if you have enough experience and skill.
