The steak is also known as tri tip steak with the fat cap left on. At least that’s what we call it in South Carolina. It come off the sholder sirloin cut.

Picana is awesome stuff. Sirloin top cap, or when defatted, coulotte steak. When you cut it to cook, you cut WITH the muscle grain. When you cut it to eat, you cut ACROSS thd grain. Insanely flavorful and tenderness right up there with ribeye. Btw, Cody, your chef overcooked it a bit, needs to be more rare.
i have never heard of that kind of meat i eat wagyu i also like new york strip i eat the mexican beef too i forgot the name but we get it here in southern illinois. my husbands uncle had to have steak every night but his wife put adolphs meat marinade on it it comes in a packet its a dry like rub but you add water only we add some like vegetable oil to it instead put it in the fridge over night or for atleast six hrs let it soak in the meat and then take and grill it or fry it. i have two cast iron older skillets that have the rib things in them like the grill i have a small none and a big one. i put some butter and olive oil in it you can also use olive oil on the meat instead of the vegetable oil. it is really good you have to try it only i have one place in paducah ky that sells the adolph i cant find it any where here but there we are on the boarder with ky. i remembered the mexican meat it is sarcaine i think thats how you spell it
