Thanks for watching, first these are not ristas that they need to be perfectly of round shape, koftas can be of irregular shape somewhat. And koftas are fried , if you like you can directly put them in hot water, but i prefer frying,

Asalamualikum di ... I think egg should be avoided because that makes kofte powdry inside ... They get easily bind without adding egg because u used the gram flour here and that is enough for binding
Egg is an integral part of any minced meat be it kebab or koftay, we never encountered such problem when we eat kebabs which has egg in it, gram flour may some time make its texture different,but when added in excess quantity.

We mince the meat n they pound it on stone with wooden hammer n they add fat. So the texture becomes smooth due to repeated pounding.
For kebab and kofta, waza uses minced meat only. Only for rista and gustab they use pounded meat with loads of fat.
