Quick tip for you Megan, to make getting the seeds out of those jalapenos go much quicker! Cut the end off your jalapeno and then take your potato peeler, if you have one of those long skinny ones, not the ones you use for your peaches. Put the peeler in the pepper and go around in a circle and pull the seeds out and then slice your jalapeno.. seed free!😊
Funny story about chow chow when I was younger I lived in Knoxville and a neighbor brought me some chow chow to try and omg I loved it and I asked her what was in it she laughed and said mama calls it end of the season relish she said everything and anything left in the garden at the end of the season!! I was very poor at the time so I made me some homemade biscuits that I learned how to make at that time thankfully bc otherwise I’d starve probably but I ate that chow chow on those biscuits until it was gone ❤ I’ve made my own chow chow since and my mother loved it!!
For those who give you grief about giving your kids stuff like zucchini bread for breakfast I say mind your own business. When my daughter, who is now 38, was young I'd let her eat homemade zucchini bread or GASP oatmeal & raisin cookies for breakfast. I did a breakdown of the amount of sugar in them and the bread and cookies actually come out with way less sugar and definitely none of the additives that commercial breakfast foods contain.
Hi Megan Your zucchini chocolate chip bread recipe is a keeper & delicious 👍 I’ve made zucchini bread for years but without the chocolate.. Me & my husband loved it and the bread was gone in 3 days😅soooo good.. Thank you
I always squeezed the water out of my zucchini. So, I looked at all of my zucchini bread recipes, and not one says squeeze or drain out the water. Thank you so much.
Whatever your recipes call for, you can grate it and put in baggies in the freezer as is. When you need it, DO NOT drain then either. Someone taught me this a couple years ago.
Those southern women I learned from could feed a family of 5 with nothing but flour lard and maybe some bacon grease! I’m so thankful for them showing me how they did things bc it kept me and my family fed !

My Italian grandmother gad a huge fig tree in her backyard. She made fig preserves & also dried them to use when she made her fig cookies at Christmas time...I miss that!
I love making zucchini bread. When I have excess, I grate it, measure it out in 2cup portions , package it and freeze. It ready for making the bread throughout the winter. Be sure to use the moisture it makes when thawed. We were overwhelmed with zucchini last year, but very few this season. Thankfully I put up extra last year. I watched your video on making lard. I’m 79 and never made it before. See an old dog can learn new tricks! We killed a hog last winter, saved and vacuumed sealed the fat. Just now have time to make the lard. Love watching all you get into.
Hey Andy and Meagan. Glad to see you’ll not wasting your corn. We call green corn with an ear on it around here fodder corn. I actually keep a plot of corn succession planted all season to cut as green fodder. About to plant my last round now for fall. I actually plant the corn in the rows thick; about 6 in apart. Does make a pretty small ear, but the green fodder is what I’m going after anyway. Man let me tell you. It keeps my feed bill way down, keeps me from having to tear into my hay and also from tearing into my ear corn too early in the fall. You’ll be blessed.
Meagan, I just found y’all’s channel and I’m loving it! We live in the city, but are avid canners and preservers with a dream of moving more rural. I think I’ve binge watched at least 30-40 videos so far! You all work so hard (I, too, am an RN with 23yrs under my belt 🫶🏼) and my favorite videos are those of you in the kitchen! Oh my goodness i love seeing younger folks cooking like you do so many have lost their way with frozen premade foods from the store!! Love these types of meals! I learned how to cook like that back when I lived in Knoxville in 82 man I learned a lot from the southern women and am very thankful!

In my whole ones I cook thin slices of lemon down with them. Loved your zucchini bread with chocolate chips. I will try it. It will be a good change.. Ty. 😘
I ain't never seen potatoes fixed like that, WOW they sure looked good gonna have to try them. You served up a great meal there for sure. Glad you used the corn stocks and all for feed while still green, saves on feed right now. Everything sure looks good around there. Some pruning of the peach and pear trees would help this fall and when the fruit is starting and makes it through the spring frost and lots of peaches and pears are starting to grow thin them out and you'll have bigger and better tasting peaches and pears. Read about that and my friend tried it and had a much better harvest . Stay safe and keep up the fun you all have around there .Fred.
Time for a scarecrow! Make you all one (that'd be a fun activity for the kids to help you with), but on the ends of the hands, tie a fishing line around them that has a foil pie pan dangling on the end of it, so that they blow around in the wind. You could also use those glass beads for eyes, which will also catch the light and scare off birds eating your corn. Your zucchini bread looks so delicious! Thanks for the recipe! You all have a good one, too!
Dehydrate pears. Shake them in some cinnamon and place them in the dehydrator till dry. They should be leathery. You don’t need sugar. Can them with a stick of cinnamon in a light syrup. Both of these are a favorite here.
I’ve been making zucchini bread and carrot cake since the ‘70’s. I was very resistant to the idea of vegetables in my sweet bread/cake but quickly we all fell in love with them both. You talked about making sure that the loaf is not gooey in the center and I giggled because my kids (who are probably close to your age now) actually fight over the center pieces to get the gooiest (hmmm how do you spell that any ways?) piece. They would love the idea of the addition of chocolate chips but I’d make mine without, although I’d eat them both in a pinch, haha. God bless y’all!
You guys are just awesome. And I love how your children want to be a part of this lifestyle and pitch right in there. I also love the kind way you treat ;your farm animals. And especially you Megan with all the work you do with the gardening and canning all the harvest. Love and God Bless. ❤
Good morning Megan, im going to make some muffins using zucchinis. We are having hot weather here in Texas which is normal for us. God bless all the hard work ya'll do❤
YUMMY sandwich...Fried green tomato with bacon and pimento cheese on toast...it so good, I hope you try. Bread looks great. Thank you, love your recipes...and everything else.
I made zucchini bread but used yellow squash instead and I liked that better! That Cowboy Candy looks delicious. I bet the two mixed are good. I ❤ the way you make your Salisbury steak like the idea of coating the patties with flour! Thank you Megan!
I love your videos! I noticed that you use store bought brown sugar. This may help you or others not to have to buy it. Ive not bought brown sugar in years. All you do is take regular granulated sugar and stir in enough molasses to either make light brown sugar or dark. Thats all it is to having fresh brown sugar!! I make up large batches and store in a #10 can with lid. It never dries out. You can use a whisk or even a mixer.
Andy it was me who ask about the sunflowers.😃 Knowing you and Megan I just thought there might be something special you did with them. Enjoy every video. Love to all the family.
I love when you cook. Can't wait to see you make fig bars. And anything else you cook. Love it when you cook dinner and Andy is right there first getting his plate. Love it . Keep up your awesome video's
I think the birds are struggling with the drought to get what they can. I didn't get any elderberries this season because the birds took them as soon as they got any color, and the wild blackberries were scarce. Field corn is all they can find
Hello Megan and Andy, I live in a small town of New River, AZ. My father-in-law had a huge beautiful fig tree. Yes, the figs will continue to ripen after they are picked. Love watching your videos. Keep them coming!
Good Morning!!! I love to make zucchini muffins in the mini muffin pan. It is the perfect little snack size bite! My one zucchini plant was lost to the borers early this year so I am going to try to use yellow squash to make some...I think it should turn out ok!
You are not wrong Megan! That time of year indeed. I'm exhausted and I'm not even a 1/4 the size y'all are. Great zucchini bread recipe, I always forget the breads Keep up the amazing job guys🎉🎉🎉🎉
Mmmmm….I make jars of pickled peppers and add anything from the garden in it. I love to stuff pickled jalapeño halves with crab stuffing and roll them in panko and fry them. So delicious! It’s a lot of work but I make a bunch at one time and then freeze them so we can fry them whenever we want. Growing up Cajun, we ate a lot of rice and gravy. When we had milk gravy, I always would tear up a piece of white bread and put gravy on it too. Happy childhood memories!
I just love watching your videos, esp in the kitchen. Your dinner looked fine! Love Salisbury steak, fresh green beans & those potatoes looked amazing -- will need to try that. Ahh zucchini bread, what can I say 😁❤ Have a blessed day

@@TrueGritAppalachianWays I had another 3/10s with the storm last night. I hope the creek didn't get out in your garden. I've been there with tobacco in the bottoms in 1984. Made me sick.
I have loved zucchini bread since I can remember. I used to take it to work as a snack and/or desert for lunch. I loved this but my hands would get sticky and I didn't always have the ability to wash them after eating. My wife fixed this problem several years ago by making them in muffin pans lined with the paper cup cake dodads and it works great. So if you take it to work or put it in kids school lunches, or just want to have it portioned out without having to cut it, give it a try.
Too bad y'all don't share meal time with us. I'm sure lots of us would like to see y'all enjoying an awesome home cooked meal... especially getting to see the younguns eating such wholesome foods.
Megan, your supper looked delicious. I’m sorry about all that corn but like Jason said it helps on the feed bill so that’s a good thing and all them pears 🍐 . My goodness gracious they’ll keep you busy, another wonderful video. Thank you.❤
I make the zucchini bread with cocoa and make a chocolate, chocolate chip zucchini bread. One of my favorites. I'm assuming you have also made chocolate zucchini cake with chocolate chips also. If not, you must try that! Too funny about the biscuits and the gravy. My grandma used to always talk about the gravy and the bread coming out even. If there was some extra gravy left, she would get a piece of bread...and the saga would continue lol. Too funny about the figs Megan. I have never eaten a fig, but my friend gave me a couple small fig trees that I still have in pots that I'm trying to keep alive. Will be anxious to ever get to try one after watching you enjoy them so much. lol
Thanks for another wonderful video! You might already know this but in case y'all don't...corn smut (aka huitlacoche in the Mexican culture) is actually edible & sells for about $20 per pound depending on the location. I've seen it sold for $28/lb at farmers markets! To me it has a nutty mushroom flavor profile & very delicious. 😄 Wishing y'all a great week! Sheri
I also can the extra sauce and put it in brine when smoking fish or making jerky. I also at times put some red hot cinnamon candy in it to dissolve and it adds a little cinnamon flavor.
My absolute favorite way of using candied jalapeno is in Kaiser buns along with cheddar cheese. The two mixed in the dough seems to compliment each other so well. The jalapeno seem to sweeten and condense inside the buns.
My husband love biscuits and gravy and adds grape jelly on top ! It’s really tasty ! Love yaw and stay safe with ur weather coming your way! And Salisbury steak is one of my favorite meals !!!
I've never made "taters" like that, gotta try that. We're coming over to your house for zucchini bread 😉 I've heard that corn smut is a delicacy in some countries 😝 i'll pass on that. Sunflowers are supposed to be good for the soil so you're wise to plant them. See you on the next one, ya'll have a good one.
I loved my fig tree fake was so good but he only got about one or two figs to eat because by the time they're ripe the bugs eat them all I don't know what kind of bug eats them but must be at night time or something because you don't see them in the day and then they stop producing I think it was because it was too shaded so I cut it down because it took too much of the yard up got so big and hard to mow under because it hung down so low but my figs were the size of my hand fist they're big like an apple kind of turned my stomach when you look at the inside because it looks like a little worms red and white worms but boy were they sweet kind of kick my **** in for cutting it down now because now there's no shade there they probably would have produced really good but it never did come back

Don't know if you know but the entire sunflower plant is edible, leaves cooked like spinach, stem peeled and eaten raw, fried, cooked, or pickled, and root is the sun choke. Sweet potato leaves and stems are edible, raw, cooked and pickled. ❤

Megan, your supper looked delicious. I’m sorry about all that corn but like Jason said it helps on the feed bill so that’s a good thing and all them pears 🍐 . My goodness gracious they’ll keep you busy, another wonderful video. Thank you.❤
i just love watching you two. especially the recipes.
Will be anxious to ever get to try one after watching you enjoy them so much. lol
No I’ve never tried it!! I will definitely have to tho!!
@@TrueGritAppalachianWays you won’t regret it
My 4yr old granddaughter and I just made homemade chocolate zucchini bread last weekend. Sooo, delicious! 😋😋❤
I will be picking pears in the morning to make pear butter for the grandkids
New to your channel. Just ❤ you. Sharing today. God bless you and family from Wyoming today. 🙏🏻✝️❤️
I like the sweet pickles made with red hot cinnamon candy too.
My absolute favorite way of using candied jalapeno is in Kaiser buns along with cheddar cheese. The two mixed in the dough seems to compliment each other so well. The jalapeno seem to sweeten and condense inside the buns.
Fig preserves and or strawberry fig preserves are delicious.
My husband love biscuits and gravy and adds grape jelly on top ! It’s really tasty !
Love yaw and stay safe with ur weather coming your way!
And Salisbury steak is one of my favorite meals !!!
Love your food it’s like I cook
I've never made "taters" like that, gotta try that. We're coming over to your house for zucchini bread 😉
I've heard that corn smut is a delicacy in some countries 😝 i'll pass on that.

Try looking up a recipe for FROG jam, I know that it uses figs, raspberry, oranges and ginger 🤔 I'm pretty sure those are what's in it, haven't seen it lately or made any in many, many years.😋❤️

Don't know if you know but the entire sunflower plant is edible, leaves cooked like spinach, stem peeled and eaten raw, fried, cooked, or pickled, and root is the sun choke. Sweet potato leaves and stems are edible, raw, cooked and pickled. ❤
Good looking dinner .
