When I used to make lasagne, I made twice the amount of white/cheese sauce, I put a smear of the sauce on top of the pasa sheets, not much, just a smear all over the lasagne sheets then the meat sauce again, that's how my mum made it so that's how I learnt to make it.
When I was bringing up my kids, as they got older, they decided that Christmas eve tea would be lasagna but one year I made it using chunks of chicken and ham, 2 thirds chicken to 1 third ham, it had 3 layers of the chicken and ham in a cheesy white sauce and 2 layers of lasagna sheets then extra cheese on top of the top layer, it was a great success and untill they left home for uni and beyond, we alternated 1 year regular then the next, chicken and ham, their choice, btw, the ham was from the big tins of ham you can buy .

Something that may help quite often butchers will be able to offer some times per lb or 100g or how ever the new fangled measurements are. Some won’t, just don’t hold them to gospel, if it all goes wrong it’s likely you not there cooking times,

I’m surprised you don’t have more views, you are a good cook, and those guys that review all that dreadful ready food from the supermarkets get so many views.I don’t know if you know or not,but lasagna is made differently in the States,no white sauce is used here, the meat sauce is the same, but it is also layered with ricotta cheese which is usually mixed with some Parmesan,an egg, oregano,or basil, then it’s layered alternatively with the tomato sauce, and the whole thing is topped with mozzarella, never cheddar.,and the sauce usually gets basil too.I was a restaurant pastry chef,we made focaccia, and you really don’t need to mix the olive oil in,usually you put the oil into the pan then the focaccia on top, then top it with more olive oil,and your toppings,we also started our focaccia with a biga, which was rested overnight in the fridge,it gives the focaccia much more taste.I look forward to see what tasty dinner you are making tomorrow, actually tonight as it’s 7 pm your time.

The people that review the "dreadful ready food from the supermarkets" are trying to help people out who are not confident cooks and have very little time from having to work so many hours to afford the money to feed their families and trying to find the best quality and best value for the least buck. Everyone is struggling so much right now, and so we're easily attracted to what might seem a good deal, and so we are grateful for them doing those review videos because it saves people with little money taking a chance on something that might not be worth paying out for. Don't knock them, please.
And Mand, I am loving your videos. I really hope you keep going. I know its early days, but already you have shown this seasoned cook some new ways of doing things and I love the dynamic with you and your Hubbs. Him getting so hungry while you're cooking a tasty dinner lol I'm a southern English gal, but my husband was Geordie, and I just feel an affinity with your warmth and welcome into your kitchen and home. I'm really looking forward to your future videos and glad I found your channel :)
