Thanks for the recipe! Did you try half milk and half water? Looks like your favourite method produces more even bagels. Will try that one even though it will take more time vs technique #3. I use #3 but they keep closing in the middle so I have to expand the middle before giving the bath. Instead of parchment paper I use silicon donuts’ forms which I bought in count of 6 and cut into single ones. Rub a bit of oil inside before proofing and bathing them but don’t bake in them as I like crusty bottom.
