A number of scenes in this trilogy are taken from the appendices of LOTR. Which were written long after "The Hobbit"; in fact, the LOTR is basically a sequel to it (a short children's book) that got waaaaay out of hand!
Have you read the Hobbit yet? I would be curious to see what you thought of the differences. I am one who loves the Tolkien lore and while I enjoyed these three movies, I was a bit sad that they didn't stick more with the actual story. I feel they felt they had to add stuff and unfortunately that added stuff detracted from the movie. That all being said, I really love how you are moved by the world of these films.
The Hobbit movies you have to take as fan fiction of Peter Jackson. The story fits the story in the movie more but this is not the story in the book. The Hobbit is a nice simple read meant for young people. It is not near as bloated as the movies are. Jackson really took The Hobbit story and expanded it to fit the Lord of the Rings movies better. The Hobbit books really exist without The Lord of the Rings. Tolkien had to go back and change some things to make it fit with The Lord of the Rings.

Best way to enjoy the Hobbit trilogy is not to compare it with LOTR. Hope it will move you in some way, as it did for me.

The white hair dwarf is Ballin. That is Gimli's cousin that they find has been killed at Morier, in the fellowship of the ring.
