      Hello Karla,
      I sure hope you're successful. I know that most of my videos are about blueberries, but there is a whole world of gardening and so much to learn. One of my goals this year is to produce some videos on growing and processing all kinds of vegetables and herbs. Putting up food for the winter is nothing new, its just that most of us it's a lost art. Hopefully you have a little space to grow something you really like.

    Can I not use sugar, only honey? What portions?

      Hello DP,
      I think you should give it a try. The taste will of course be different, but probably pretty good. The biggest difference will be the texture of the syrup. When the sugar melts, it adds thickness to the syrup as it mixes with the cooking blueberries. I think this can be adjusted by the amount of water you use during the process. The honey of course can supply the thickness and sweet flavor to the final syrup. No doubt about it, honey is much better for you than raw sugar. I use honey to sweeten my tea. I would be very interested in knowing the outcome. The results should be quite good.

    After bringing the mixture to a boil, how long do you let it boil before straining?

      Hello Jerry,
      It's not long. The thing to look for is a change in the consistency. It will thicken slightly. It's actually a matter of cooking out the water to the point it suits you. Once the syrup is in the jar and is refrigerated, it will thicken more.

      Hello Blue,
      Sorry for taking so long to get back to you. There are no preservatives added. However, honey in itself is a preservative. As you probably also noticed, I did not go through a canning process. That is the reason the honey syrup is stored in the refrigerator. I've had it keep for months with no problem. Usually it is gone quickly. If you did can the syrup, it would be fine for years on the shelf.

      Hello AkhiLesh,
      If you decide to make some syrup I hope it comes out great. It is pretty hard for anything that has blueberries and honey as the main ingredients to come out bad. Here in South Carolina, pouring this over a buttered hot biscuit is pretty good.
