Potato and Spinach Vegan

Ingredients
:
4 medium-sized potatoes, peeled and cubed
2 cups fresh spinach leaves, washed and roughly chopped
2 cloves of garlic (cut into halves)
1 red dried chili
1 teaspoon mustard seeds
1 tablespoon vegetable oil
Salt to taste
Fresh coriander leaves for garnish (optional)
Instructions
1. Heat oil in a large pan or skillet over medium heat. Add mustard seeds and let them splutter.
2. Add garlic and chopped red-dried chili to the pan. Sauté for a minute until the garlic turns golden and aromatic.
3. Add the cubed potatoes to the pan and stir well to coat them with the garlic and chili mixture.
Reduce the heat to low, cover the pan with a lid, and cook the potatoes for about 15-20 minutes or until they are tender. Stir occasionally to prevent sticking.
5. Once the potatoes are cooked, add the chopped spinach to the pan. Stir well to combine with the potatoes and allow the spinach to wilt.
6. Season with salt according to your taste and continue cooking for another 3-4 minutes, until the spinach is fully cooked.
7. Remove the pan from the heat and transfer the potato and spinach mixture to a serving dish.
8. Garnish with fresh coriander leaves, if desired.
