    Also make sure you are getting your emails from Knifewear and they aren't going into a spam or advertisement folder. Hate to wait, and then miss your chance because you didn't see the email.

    I own a set of koishi. 3 of em use em every day over 10 years strong. Masakage "pebble" koishi. ... also can say after a decade of use they look mean as hell and have aged very nicely. For the record if they have made meals for Japanese ambassadors in Ottawa, amongst many others.

    I have a 210 Takeda Gyuto that is over 20 years old now. It is so different and rough compared to his new AS line. Love that knife.

      @@jackbolder5734 I would say much more refined and smooth in finish, which is good but not my thing in a Takeda.

    I have a Masakage Koichi knife 😎
    I have the nakiri and I can say it's a very very good knife, it's so thin, so light, and it cuts so well you don't feel like you're cutting through food ! On top on that, that knife is really beautiful, and I definitely recommend it !

    Add the Kurosaki Fujin AS 240mm gyuto to your list. I bought one in 2018, and I haven't seen any since. I saw some other shapes from that line pop up a few weeks ago, but they went pretty quickly.

    Hard to hear the name of knifemaker at 6:47.
    In fact many of the japanese names are hard to take it just by listening, esp if you are not familiar with them all. Perhaps you could insert a little graphic with names etc for us not in the know. Thx

    You've certainly got some of the heavyweights of the collecting scene here, but even so there are a few I wasn't as familiar with, so that was cool. There are great knives out there that deserve a longer look, but there are a lot of knives generally, so it's a good service to highlight some of the more deserving. I've got a few of the big names, and some are drawer queens and will be for some time because they overawe me and make me feel unworthy as a journeyman sharpener. I can get 'em sharp enough, but the consistency isn't perfect. Oh, look, right on this page is Naoto showing us how not to ruin our knives. Just the ticket! Later!

    I got a 240 takeda gyuto a few months back my favorite knife looking for a takeda or possibly a yu kurosaki chinese cleaver

    Rhaaa the taxes are so high to send them to France. 75€ of taxes on a magnificent knife at 210€ at the base, that I have been looking for for months and that I finally found on your website. Unfortunately I cannot afford it. We have too little purchasing power in France, it is really too depressing.

    Luckily, we have enough blacksmiths here in Germany who produce knives by hand and often even deliver better knives, whether it's handle processing or understanding how proper heat treatment works. I can even have my knife made exactly to my requirements. But they now have longer and longer waiting times :/

    What's the knife being referred to at 7:13 ? I'm curious to know which knife is so mythical that a Nigara Troll killer (which is a grail knife for me) was suggested as an alternative.

      Leaves more for me! They're not as delicately pretty as some, I agree, but they have a charm all their own, at least to me, and evidently a bunch of others as well. I have a Takamura Chromax gyuto I used to illustrate a magazine piece on giving knives as gifts last year. Just a gorgeous knife.
