I am extremely excited in finding your channel. You are authentic, knowledgeable, and easy to follow and listen to. I have for years, been looking for the name of this beautiful creature that grows at the base of one of my oaks on my property here in North Fl. Anyone looking at the photos I've taken say "Chicken of the woods" I want to taste it but have been skeptical as the one I have, grows at the base, not up on the trunk. Then I found you! Now I'm 99% sure its the Laetiporus cincinnatus, I know how to tell the difference, I know how to taste test, I know how to prepare, what to expect.... You my dear, are the gold found in this massive river of "Everyone has an opinion", I literally feel like we had a conversation...❤
I harvested a nice batch last week. It was my first go with this mushroom. I used 70% of each shelf, only cutting off the tough end toward the tree. It was a beautiful young and fresh chicken. We made a few things, but by far the best was chicken of the woods parmesan. We cornstarched large pieces in a bag, dredged them in egg, and then pressed them into some panko bread crumbs we seasoned. Then we shallow fried them in oil for around 2 minutes on each side. Salted them fresh out of the oil. Put fresh motz and freshly grated parmesan on the cutlets and broiled them to melt and color the cheese. Then we had them over pasta with some tomato sauce we made from last year's tomatoes that we had canned. Finish with some more Parm and garlic bread is a must. One of the best chicken parmesans I've had anywhere ever, my gf agreed. We even did chicken cutlet grinders a couple days later frying the chickens the same way. I won't be passing by these any more. They're now one of our favorites along with hen of the woods.

White pores, early in summer and as mentioned, tree stumps etc. We're seeing flushes now in WNC and it's been bone dry here. Blanch and freeze for stuff later. Thanks for the video, well done!
My friends and I tried this (including foraging) for the first time today, and we DID NOT expects expect it to taste like chicken and we were very pleasantly surprised, no one expected it actually taste like chicken and it really did.
Last year was a bad season for everyone here in indiana as well. But chanterlle, bolete, and summer oysters were insanely good. Seems fall will be the same chickens already everywhere and shrimps and fall oysters.
Found only one chicken so far, it was actually two feet from three morels. It was only about the size of a sheet a paper. But was an early, suprising find! Can't wait for more videos from you, this was great!
Great vid! Been so busy gettin the new property ready for growing season haven't had much time to get out and forage. It's nice to have other's experience to draw on for both learning and motivation. Thanks for your efforts in making it available. Take care! d:^)
I just moved from the states to Spain. I miss the mushrooms of the Northeastern USA. COW is not my favorite to eat, but I am always excited to find it. But I will say, that I found my first flush of morals here in Spain last month. I about lost my mind. :)
You too man! I haven’t had the energy to make videos about mushrooms during the off season. I tried a few things and I just don’t get stoked enough for it to have the energy I want. I require live wild specimens

It will probably fruit again, but it might not be until later in the year. Given your location, it could be a chicken species that favors fall over spring. We have some in spring here, but the majority of them happen from July-September

I made my first huge find of COTW last weekend. Ended up with 15 pounds of clean, blanched, and now frozen bags 😍😍

I just cooked up some that I harvested today and I've never eaten a wild mushroom. With a tab of butter it was delicious.

I dehydrate the parts that maybe tough then powder it for soup base and such.
I’ve never done that with chicken, should give it a try! That’s how I use hen of the woods bases that get really fibrous

You can eat the entire bloom that is in your hand and not waste any part of it. I know because i did. Found no maggots and sliced and cooked well.
So here’s a Q , how can I grow this as I think 🤔 it grows out of trees.

I found some chicken in the Fall here in Ontario. It was getting old. Just wondering if it will re-fruit this Spring off the same stump?

I have found that it will sometimes fruit every other year in some spots, and every year in others
I found loads but I didn't know you shouldn't eat it raw and got very sick. Wish I had known it put me off now.
