  • Chili crisp is a delightful condiment that can go on just about everything (including ice cream). It is wonderful on just about any protein or vegetable, and especially tasty with eggs. Unfortunately, not only is chili crisp fairly expensive in stores, most commercial brands contain canola and/or soybean oil - both of which are highly processed and inflammatory for many people.

    Ive been making my version of chili crisp for a while. My grown kids love it. Avocado oil, home grown cayenne and chipotle chili flakes, Szechuan pepper, soy sauce (tiny bit), anise, cumin seeds: all warmed together and steeped for 1hr. Then i add deep fried garlic and shallot (from the asian grocery) and sesame seeds. I dont make it very often because i eat the crispy bits with a spoon.

    In Chengdu we call this red oil or Chili oil, it's quite good with dumplings. I am glad to see this recipe. Now I can make my own without wondering what the ingredients are 😁

    I'm so happy you decided to try making your own Chili Crisp! The recipe I use is similar but has chopped peanuts in it. If you aren't opposed to peanuts, you should try adding it to your next batch. Believe me, you won't stop at making it this one time. This stuff is addictive. I've tried three different recipes so far, and they have all been fantastic. And so much cheaper than buying it in the store. Avocado oil is my oil of choice as well. Definitely try it in the scrambled eggs. It's wonderful!

    I'm now a Chili Crisp fan thanks to you, Steve. I had this long ago while visiting Malaysia in the early 1990s. It was homemade and I never knew you could purchase it as a condiment. After watching TikTok Fried Egg Hacks, I bought some Wing Fung Hong Chili Crisp from Amazon. It has a garlicky flavor, a lot of crunch, and just the right amount of heat. I'm not too happy about the soybean oil content so I can't wait to make your recipe.

    I got addicted to this stuff on my eggs 30yrs ago when I worked in a Chinese place in college....after deciding to get healthy(ish) a couple years ago I started making my own with avocado oil too...I like to add a bit of chipotle powder and ghost pepper to mine, and I don't add my sesame seeds until it's cooled for a bit of extra crunchy factor...togarashi flakes are great too...
    I'm going to give this version a whirl next time, looks great!!!

    Maybe you should produce this. Serious Keto Chili Crisps has a nice ring to it. I would buy it! I’ve been looking for some in a better oil and can’t find any. I’ll definitely check out the trader joes version while I wait on yours. 😊

    You can get the dry organic chili crisp from Pinch Spice Market that you combine with avocado oil. It's not expensive and is delish.

    Great video. This has been on my list of things to make for some time.
    A tip for those of us who need reading glasses and forgot them is to check if your phone has an accessibility feature to use the camera as a magnifier. I have it set up on my iPhone to activate with 3 clicks of the side button. The advantage over the camera app is that it allows image adjustments but doesn't need to take a photo that then needs to be deleted.

    I’ve never tried chili crisp before but it’s a new staple in my house. Once those flavors bloomed, holy moley it became so fragrant and tasty!     :D hand grinding the seasoning....after a video of yours I watched not that long ago, I dried my own rosemary, oregano and peppers and then crushed them myself using a freezer bag and marble pastry roller and my mom saw that and said, I have a stone grinder I got in Mexico you can have! I use it a lot...thanks :D

    I would make this TODAY but I’m lacking 9 ingredients!😢 I tried one of the unhealthy versions once at my brother’s and it was delicious, and I suspect Steve’s will taste even better!

    I really have to make this for my husband and grandson. They are much more into chili flavor than I am, though I do like it.
    I’ve avoided most of the chili crisp because of the ingredients, though I just bought a Mexican version, Don Chilio Serrano Chilē Crisp. Ingredient list: serrano chiles, olive oil, salt and spices. Haven’t tried it yet so??? Looking forward to trying yours.

    Idea for a video: how much does your blood glucose increase if you put a sweet in your mouth and then spit it out? This would show how much our levels increase based on tongue/brain response rather than gut. Just a thought.

    Thank you for this recipe Steve and Courtney! We love chili crisp at our house. We'll definitely be making this one. It will be nice to have one without the seed oils.
    My son likes to put it on steaks before vacuum sealing and placing in a sous vide, and we save the broth that's created to add to a spicy soup.
    Any suggestions on substitutions for the Korean chili flakes? I have a bunch of garden peppers that I'm dehydrating right now- jalapeño, guajillo, poblano, pasilla, cayenne, and mirasol to name a few.

      Dried cayenne should be pretty close based on your list.

    Now that you've made it up, what will you do with it?? It might be good on top of salmon that's been bathed in turmeric and olive oil, then baked. (New spin on a Bon Appetit recipe using a coconut crisp topping.)

      It can really go on about anything: eggs, vegetables, any protein. I've even seen suggestions to put it on ice cream (though I haven't tried that yet).

    On my list of "Recipes To Try" after your mentioning it in another video. Checked out at local stores and it's $9.49 / 7 oz. (LOL at least it contains non-gmo canola oil). Thanks for your efforts in bringing us new things to try!
    Spices on a Budget Tip: Check out Badia brand spices. Your store may have them in the International / Hispanic section rather than in "Spices". They're a hidden gem! Less expensive and good quality. They do have Star Anise. Have fun exploring!

    This looks amazing! Do you know what kind of market would I find the peppercorns and star anise (without having to buy a lot)? My regular grocery store doesn’t have a lot of variety. I’d love to try this!

      My grocery store had both. The anise was by the regular spices and I think the peppercorns were by the Asian food.

    I've been using Sauce Up's chili crisp sauce, and was all happy cause it's non-gmo, keto/paleo friendly, and it uses grapeseed oil.
    Now I'm depressed to find out that's just fancied up canola oil.
    It's really good on scrambled eggs.

      Canola oil is made from RAPEseed oil. As for GRAPEseed oil, there seems to be some differences of opinion on that. Everything I've read indicates that it is not inflammatory. Hope this helps.

    What's the difference between Chili Crisp and just regular chili oil like they have in a chinese restaurant? is the the garlic etc? i love spicy hot chili oil, and would love to make some without the horrible oils, but i didn't like the crispiness of chili crisp the time i tried it.

      Yes. We chose avocado oil because of the higher smoke point (in case we decided to use it in a stir fry).

      I don't recall recommending pink peppercorns, though I do have a bag. The Sichuan peppercorns are quite different and probably more easily found (I got them at my run of the mill grocery store).

      I keep mine in the fridge, but given that the ingredients are submerged in oil, this should allow you to store it on the counter without worry of bacterial growth.

      I store in the fridge, though since it's in oil, it would probably last at room temp for quite a while. In the fridge, I would think it would last indefinitely.

    How long do you think it will last in the fridge, thinking not long shelf life with the shallot and garlic but not sure???

      I would think quite a while (a month or longer), as all of the ingredients are submerged in oil and thus not exposed to anything (oxygen, bacteria, etc.) that would cause it to go bad.

      Generally "chili crisp" or "Sichuan chili crisp".

    I want to try this! Trader Joe’s one is not spicy to me and I love things with a kick! One question is how you managed to slice the shallots without turning to a crying mess? The two times I have sliced shallots it was worse than slicing onions. Do you refrigerate them before slicing? I got that hack for onions and it helped a lot.

      Though you and I have Kashmiri chile flakes in our pantries, I suspect most of my viewers do not. Sometimes, I opt to simplify my recipes for the broader population and then let the foodies tweak to the limits of their imagination. 🙂

      @@SeriousKeto totally fair. I bought a one pound bag of kashmiri chiles on a-zon and used those to make a massive batch of garlic chile crisp. But I also had dehydrated garlic flakes that I had picked up in bulk in New Orleans (which I usually use for Gambas Pil-Pil), so I used those and they fried up so quickly.

      Thanks for the tip on a milder Chile. I've found that @SeriousKeto's spice level is a bit high for my Norwegian palate. I grew up where brown sugar was added to Ragu spaghetti sauce to make it more mild!

      Strange, I just opened up a new box and now I'm wondering if I'm imaging things. This box seems to have the peanuts more finely chopped, similar to those in the maple pecan bars. It tastes the same, but I'm not thrilled about the texture. @@SeriousKeto

    Check out Dr Westman’s latest video re RUclips burying Keto content by influencers and prioritizing videos that are suggesting a plant based diet because the World Health Organization is anti Keto. I was searching thyroid info today and could only find shirts by hospitals and no individual content. Of all the things I know about RUclips this is the most disturbing.

      I watched Dr. Westman's video response to Dr. Berg's video. I quit following Dr. Berg when his channel became almost entirely click-bait supermarket tabloid material (Eat Raw Onions to Boost Testosterone). I really loved his channel back when he talked so much more about keto, but scrolling through his videos from the last 6 months (that's 170 videos) and there was JUST ONE that had the word "keto" in the title or thumbnail. Perhaps this is a reason that Dr. Berg doesn't show up at the top of the list on a RUclips search of "keto".
      That said, I have little doubt that there are powerful organizations out there with a strong anti-keto agenda. For better or worse, there is no platform on the internet with the reach of RUclips, so there I'm not sure there is a viable alternative for us if they decided to silence ket.

      @@SeriousKeto I don’t follow Berg. I did just search Keto diet and the first 20 or so were why it’s so dangerous. I agree not much out there for an alternative. Still scary that Google is taking sides. Thanks for your channel.
