The word "shrub" can also refer to a cocktail or soft drink that was popular during America's colonial era, made by mixing a vinegared syrup with spirits, water, or carbonated water. The term "shrub" can also be applied to the sweetened vinegar-based syrup from which the cocktail is made; the syrup is also known as drinking vinegar.
Drinking vinegar is often infused with fruit juice, herbs and spices for use in mixed drinks
The American version of the shrub has its origins in 17th century England where vinegar was used as an alternative to citrus juices in the preservation of berries and other fruits for the off-season.Fruit preserves made in this fashion were themselves known as shrubs and the practice carried over to colonial America.
By the 19th century, typical American recipes for shrubs used vinegar poured over fruit-traditionally berries-which was left to infuse anywhere from overnight up to several days; afterwards, the fruit would be strained out and the remaining liquid would be mixed with a sweetener such as sugar or honey and then reduced to make a syrup.

Im going to give this a try! I quit drinking months and months ago. I recently quit smoking! Which honestly I never thought I would be able to. I've smoked on and off since I was 11! Yes thats right 11 years old. But I did it. A week today and dont even have the urge! So now I'm on the path to quit soda and I then won't have a bad habbit to my name. Woohoo!!

Vada Ann Thank you!! Dr. Pepper is my soda of choice. If its not in the house I'm fine but my husband keeps bringing it in. I told him if I was addicted to meth would you bring it in the house? He doesn't understand. But he also is addicted.. so I think he's in denial!

Thank you Stacy for this recipe. I've done some experimenting & found the straining a bit of a pain, so I just put everything in my Ninja blender until smooth & don't bother to strain. Also, I always add some fresh ginger which seems to help with the vinegar taste as someone had mentioned but I'm sure putting basil or any other herb will help with the flavour. We LOVE this drink & the haymakers punch, it's got us off drinking pop. Cheers from Canada

I actually just came to your page to get proportions for the drinks after making the blackberry shrub combo last week! I used wild and domesticated blackberries and the syrup tastes great! I had some really crystalized honey and this was a great use for it. I have peaches that are a little wormy so I can trim around that and the unsightly trimmings will be a good shrub ingredient! Thanks.

I'm definitely shrubbing it! Made some strawberry shrub a couple of days ago. Picking up some Palisade peaches (my favorite cause that's the area I'm from) at the farmers market tomorrow so I can make some more. Cause the last time I had peaches and made shrub, it was some of the best I've had so far.

My peaches are about to come. We are in the Pacific Northwest so our peach is the Frost peach which comes and goes really fast. Super excited to try the shrub on not only the peaches, but some of out other fruit. Love the use of herbs too. Love your channel!!! Meg

I'm just seeing this episode. I had seen your other one with the black berries. I made a blueberry one first. Then I made a peach one. Currently using this one, just devine!! I'm going to be making a nectarine one and a type of purple grape. Thanks for sharing all your knowledge. I love these drinks! And I've learned a lot from both of you.
